I think this thread is incredible!! Love the pics! I would like to add that not only have I gotten great food ideas from the recipe forum, LindaSue, and Lauren, but sugarfreesheila is a great asset here too. I have tried her recipes and they are great! Her pics are inspirational also. Her site is sugarfreesheila.com and posts here once in a while. Bobo--what a great job you have done--Wow 62 pounds since Sept......

Cinnamon................if you like mushrooms, you will LOVE these!
One of the strongest mushroom flavors I have ever had! Something
about the combination of those ingredients that just really makes
them pop

Hey Bob-
Thanks for the great post. Dying to get to the point where I can make the Banana cake.
Just FYI, I've made the Zucchini noodles using my Mandolin with the set on a julienne blade. They come out like spaghetti and work the same way. Sometimes the the different shape is good.

Thanks again for all the effort you put into this. Loved it!

John.............Thanks for the compliments and tips. I hope my
wife doesn't see your post though, she's been pestering me for
a really good Mandolin for a while already....LOL!

fawn............I can't believe how many questions I get about that
countertop...lol. It's a river rock based form of granite called
"Rhodium Bahia", from Brazil. The red isn't for everbody, for sure,
but it also comes in a really pretty brown and green too.

By the way, we all know what a healthy, wholesome diet regime
you follow, any chance of you posting a few of your favorite menu pics?

I think you can see, other than my weakness for Sucralose, that I
try to keep it as natural and whole as possible too

I love the red - it's very warm and inviting. We're getting to replace our tile countertops so I'll research this - the green sounds intriguing, too!

And once again, thanks so much for the food photos - I know it's time consuming to do, but seeing the steps along with the finished product is amazing and so appreciated! If I ever make anything picture-worthy, I'll be sure to share. (May even post my disasters LOL)

FYI the first time I saw this recipe I laughed, because there is a thing in Canada called ZOODLES.

You will not believe how TASTY these are!!! Mushrooms, Heavy Cream,
Parmesan Cheese, Zucchini, what's not to like???

The dish is nicknamed "Zoodles", like maybe the Zucchini is a
substitute for real noodles, but this dish is not a substitute for anything!!!

It is an EXTREMELY tasty stand alone side dish that I would make
even if I wasn't low carbing!

By the way, this is not my creation. I think there are some threads
on here about these.

This was a really big batch, that would probably feed about 6 people.
We started with 3 Zucchinis, and a large container of Mushrooms (12oz I think).

Just slice the Zucchini with a vegetable peeler. Throw away the very first
strip, and then work your way around the vegetable leaving on just enough
green for color.

Cook the mushrooms down, and make sure all of the water is evaporated.

Add about 1 1/2 Tablespoons Butter, 1/3 Cup Cream, and 1/2 Cup Parmesan.

Simmer to thicken. Add salt and pepper.

Stir in Zucchini. The Zucchini goes in last because it doesn't need to cook very long.

Simmer until thick.

Top with Parmesan. Enjoy.

Everybody.............thanks for the compliments!!! I hope you all found at least
one new dish to try. Please post your favorite pics
too, and let's keep this thing alive and on top as a quick 'go to"
when we are at a loss for ideas, or feeling like a cheat

annabird.............YES, I enjoy every single one of these foods on
a regular basis. I have lost 62 pounds since September, the first
32 pounds in 6 weeks was from this menu! The last 6 weeks and
30 pounds has been from a different, more restrictive plan, which I
will be done with in a few days.

Wow 62 lbs in 2-2.5 months is wonderful! Congrats! This is the new inspiration i need to get back on the bandwagon So for 6 weeks you did Atkins Induction and now a stricter LC plan????? More info please

You were right, I wasn't bored.
