Andoullie Sausage - what should I make

I bought some Andoullie Sausage and I can't think of anything to make with it! I have a Jambalaya recipe, but would love to hear other ideas. Thanks.

It's good chopped up, browned, and put in an omelette - I happen to like it with browned onions, sour cream and cheese in it too.

I bet it would be good in some sort of cauli-chowder type of stew (maybe an adaptation of Cleo's cauli stew?)

It tastes a little like kielbasa to me.

eta: haven't tried it, but maybe in something like Linda Sue's cauli bisque? I haven't looked at the recipe but that plus cauli sounds kind of yummy to me.

Thanks! Those all sound good to me, but I am craving eggs so I think I am going to try that omelet.

Chicken and Sausage Stew with Oven Roasted Potatoes Recipe : Dan Smith and Steve McDonagh : Food Network

I love, love, love this recipe. I make the following tweaks to make it LC:

2 carrots - I use 1 carrot and 1 stalk of celery
1/2 cup flour - I omit and just use a little xanthan gum
oven roasted potatoes - I use cauliflower instead
