STORAGE OF ALMOND FLOUR

I just ordered and received a 5 pound bag of Honeyville Almond Flour. I am wondering about how to store it. Should it be refrigerated or frozen? If it should be frozen, is it OK to just freeze the entire bag without dividing it into smaller portions? I'm worrying that it will freeze into a solid block. Also - how long will it keep in the freezer or refrigerator? Thank you for your help.
And thanks to Soobee, Jacksmixedtape and Charski for recommending this brand of almond flour in a post from a few weeks ago. I made Linda Sue's Banana Nut Muffins with it today and they were really delicious!

I divide it into five one-pound bags, seal four of them in FoodSaver bags and freeze them. The fifth pound just goes in my cupboard.

It does freeze into a solid block, but if you're in a hurry, you can put it in a bag and wrap a cloth around it, and then attack it with a meat tenderizer....

I store mine in the freezer. When I need it in a hurry I find the handle a knife (the opposite end of the blade) works real nice to "chip" it out of the bag. The freezer is where I store all my nuts and nut flours.

I store mine in the freezer but I don't use it very often. Whenever I know that I'm going to use some, I take it out and leave it on the counter for an hour or two until it softens up.

I, too, store mine in the freezer, because I don't use it very often. I just leave it in the original bag, unless I have trouble keeping the bag closed. In that case, I just slip the whole thing, bag and all, inside a gallon-sized zipper bag and put it in the freezer.

It does freeze firmly but it's not hard to break up and thaws quite quickly once you break it up a little. I also keep mine in the freezer but I keep the pound I'm using in the refrigerator so it's never hard. Honeyville has good almond flour for a very reasonable price (though Netrition is great for most other things! )

I just throw that giant bag in the fridge and break it up a mix with my measuring cup when I have to scoop some out.

Where did you order the almond flour and was it cheaper than Netrition? It's SO expensive but I want to get some in the house for the holidays...

Unblanched ends up tasting like wet sawdust.

lilymo - I ordered the Honeyville Blanched Almond Flour directly from Honeyville. Their website is honeyvillegrain.com. It was $28.99 for 5 pounds. They don't seem to carry a smaller size. Netrition carries Bob's Red Mill brand. I tried that, but it wasn't ground as fine as others I've used and tasted a little more grainy in baked goods, so I decided to try the Honeyville one. I really like it a lot better than the Bob's. In the long run, I think it's less expensive than Bob's Red Mill, but -- you're right -- it is expensive!

didi - I think the blanched is better. It has the skins removed, looks more like real flour and doesn't have as strong a taste. Hope you like it. Write back and let me know after you order and receive it, OK?

The shipping isn't expensive at all -- $4.49 -- regardless of the size of your order to anywhere in the United States. Still less expensive than buying 1 pound bags at $12 a piece!

The Honeyville stuff is a very good product. It is the only almond flour I'll use anymore.

I've ordered almond flour from them for years - they're a very reliable company. If I'd never tried almond flour and just wanted to buy a little to test it I'd probably buy just one pound from Netrition - also a very reliable company!
