What to do with left over pumpkin
I have a half cup of canned mashed pumpkin. What should I do with it? I made the pumpkin bars from the other thread and I do not want it to go to waste.

I freeze it in little tablespoon-sized "pumpkin blops" and then bag it up. Throw a few into a smoothie in the blender and make a pumpkin shake! I use about 6 oz. or so unsweetened vanilla almond milk, a splash of heavy cream, sweetener and cinnamon and/or pumpkin pie spice to taste, a little thicken-thin-not/starch if you have it to make it thicker, blend all that together and then drop the frozen pumpkin in one at a time with the blender running until it's as thick and pumpkin-y as you want it.
Or, mix that 1/2 cup of pumpkin with 1 egg and about 1/4 cup cream, sweetener and cinnamon/pumpkin pie spice and a little vanilla and microwave at 50% power in a custard cup until the edges are setting up and the center is still wiggly. Refrigerate until firm. Pumpkin custard for one!
Or, mix with a little melted butter, salt and pepper, and eat as a side dish. It's just squash after all!

Cream of Pumpkin soup.
Mix 1 T into 1/4 cup ricotta, and add a splash of vanilla ext and splenda (or just use some DaVinci's) for a nice little dessert-type snck.

You could make sugarfreesheila's one serving pumpkin cheesecake. You take 3 oz of cream cheese, add 1/2 cup pumpkin, 1/8 tsp cinnamon and 1 pkt of Splenda. Put in microwave for about 30-40 seconds. Mix well and eat. Very yummy!! Even my picky, really picky 2 yr old will eat this. He does not eat any veggies at all but will eat this. My changes to this recipe are--1/4 tsp of cinnamon and 2 pkt of Splenda as I like it sweet.
