I use the stuff in the can-- much easier cleanup; and my housemates love it. I've done it with the fresh grated, though, and it was Yummy. I'm thinking of mixing the two. I've also used a combo of mayonnaise, 1 egg and Boar's Head Dijon Mustard as the "glue" for the "breading".

I was thinking about using mayo for the glue. I ran out of butter the last time i was making them and just used cream for the last few...worked out fine!

The Mayo *with the egg* seems to work best for "glue". I even use this recipe for Catfish (or any other kind of fish). I mix the mayo and egg first-- sometimes add a little mustard and a bare sprinkling of Splenda-- then I slather the chix with it. Shake off excess and roll pieces (and press to coat) in a pie pan with the cheese.

Oh! I forgot-- if you ever decide to make Heroin Catfish-- use a little Old Bay seasoning in your "breading". Also works well for Crab Cakes-- or "poor man's Crab Cakes", (any kind of white, firm fish.)
