I made this for a group of ladies this morning..

Same crust/cream cheese layer..
Then I added sliced strawberries for the banana layer
Whipped cream
Blueberries for the pineapple layer
Whipped cream
Raspberries for the top layer with walnuts..

It was wonderful..and nice and cool for a summer's morning. I made this last night and covered it well and it was fine this morning.

I made this with strawberries, blueberries, and almonds on top. It was wonderful. The best LC dessert I have made in the year I have been LCing. Thank you bobo so much.

For the blueberries, they tend to roll around. I dip them in a little slightly warmed up sf apricot jam, then put them on it then refrigerate. Then they won't roll anywhere.

carolynf-- i read this is one of your favorites. have you ever made part of it in advance and keep it in the fridge? I would like to make the crust and filling today- let it sit in the fridge covered until Christmas and then put the whip-cream on. I am wondering if it will be OK.

I'm not Carolyn but you sure can. Secure it well so that is doesn't dry out.
Use plastic wrap first then alumium foil. This is what I did.

Esther..is my alter ego...I do that exactly..Make the crust, etc.up the night before, then
add the yummy stuff in the a.m...

I have served this for coffee cake at a morning meeting and the ladies went wild..Whipped cream always drives people wild, I think.

i used swerve for my sweetener-- this is now my favorite desert. i made two of them and served them Christmas day- and no one believed it was low carb. warning-- this recipe is so good that you have to be able to do portion control. i had 1/2 a cake leftover and i ate it all the next day.

He has a peanut allergy then he can eat almond flour.

Peanuts are a lugume not a nut.

Well, I know he might be able to have the almond flour but he is only 2 so we stay away from all nuts at this point. It was too severe of a reaction to risk it.

Yes it is wonderful for pancakes , waffles and lots of baking.

I don't use CQ anymore because I'm allergic and gluten free. You can make it work.So you are going to sweeten it and make it like a large cookie for the bottom layer. If you want to try CQ then I'll try to figure out how much you would use.

There is also a whole thread for carbquick. Let me know if you want it.
