i am so out of my league in the baking dept. BUT....

do u think it is possible to use banana & pineapple extract or Davinic syrups to cut down or replace the actual fruit content?. Fruit is SUCH a trigger food for me. Love & Profits: FLATFERENGHI

Hey Flat..............I personally can not answer that for you. My first
instinct would be to say no, just because the fresh fruit added so much
flavor, moisture, and texture, but on the other hand, you never know
till you try

You could probably lose the bananas before the pineapples though
if you were to find a happy medium.

Hola! this looks fantastic and I want to make it this weekend for a dinner party dessert

Question re: FILLING - Mix 8 ounces Cream Cheese, 1/2 Cup Sweetener blend, 1 Egg, and 1 Teaspoon Vanilla.

is the 1/2 Cup Sweetener blend ... Splenda??

anyone know how much Erythritol I could use instead??

Hummingbird..........I mix my sweetener blend in advance for convenience.

It consists of:
1 Cup Erythritol
1 Splenda Quick Pack
1/8 to 1/4 teaspoon Stevia

Measures like sugar, but much sweeter, so sweeten to taste.

Splenda Quick Packs are different from granular splenda, in that they haven't been bulked up in order to measure just like sugar. Splenda quick packs are little packets of splenda (1 tsp of powder per packet) that have the sweetness of 1 cup of Splenda. Unfortunatley they have been discontinued, but you can still find them from time-to-time in Big Lots. I have been hoarding it :blush: ever since I found out it was d/c, so I have a a TON of packets now.

You can also order the Quick Packs directly from the splenda website.

I also have a few dozen I can sell you lol. I also stocked up because
they were being discontinued, but then I found pure powdered sucralose
with zero carbs on Ebay, and have been using that since.

Thank you so much Bobo, I have this in the fridge as I type. I didn't use the strawberry sauce I made with frozen strawberries and only one layer of whipped cream. It was so hard not to sample before tomorrow... but I managed...giggle
I'm making a cake for the non-low carbers but I'm better nickles to dimes they eat mine up first. It looks fabulous!

Hey Bobo,
No I made a simple strawberry sauce from frozen strawberries, butter, erythritol, not sugar, and stevia. I cooked it down til it was pretty thick and poured it over the bake cream cheese layer. Once it set up in the fridge I added a layer of whipped cream and sprinkled the top with toasted pecans. It was to die for! Next time I'm going to double the recipe, make it up in a couple of those disposible tin cake plates so I can freeze one for later.
I love how the crust layer compresses and becomes cookie like. I'm not sure it's not my favorite part...giggle
Thanks for sharing it really is marvelous and I'm thinking blueberry or blackberry sauce either one would be just perfect on top of this. maybe cranberry sauce! oh my goodness I have some left over and I adore cranberry sauce! I make mine with the zest and juice of one orange just to give it that nice citrus flavor.

oooh they both look wonderful. I think I'm going to use my left over cranberry sauce to make another like the strawberry. I'm pretty darn sure it will be a huge hit, since we all adore cranberries. I went nuts and made a double batch so I'd have some left for roast chicken next week. Seems I needn't have bothered. My family was so busy look and working on the house next door (so they can rent it) that they barely sat down long enough to eat...giggle

I just made this for a ladies' luncheon and it was very very nommie..and rich..

I made it my 9 x 9 pan and then I cut it into 12 pieces cuz you don't need alot.

Some tweaks I did: I used the pineapple tidbits in the juice (small can)..Drained the juice into a bowl, then put my banana slices into the juice so they wouldn't brown..Then I drained them. You can cut the banana slices very thin..I got a whole recipe out of one medium banana.

Then when I whipped the cream, I added a few Tbs. of SF vanilla pudding mix to stabilize the cream and give it more body.

This could easily be doubled and made into a 9 x 13 for lots of peeps..It is now one of my favorite desserts..Thanks, Bobo.

Carolyn..............sounds like a perfect re-creation of what I enjoyed.

The original high carb version is actually no-bake. I was going to make
this no bake originally, but I was afraid the Erythritol would be too grainy.

It still turned out grainy-er than I would have preferred.

Now that I have my my new powdered Sucralose, I think I will skip the
Erythritol next time and just use Stevia and Sucralose as the sweetener,
as well as omit the eggs, and skip the baking.

I am with you though, this definately gets added to the favorites list!

The only changes I can remember is not using the davinci syrup - and added a few sliced strawberries (banana split) and I used the pre-packaged Splenda Blend (which may have been more carbs). Also I didn't have a pan big enough to do the water bath - so just baked it in the pan. I baked it Thanksgiving day and was slightly rushed. My the time I got to my sisters an hour away it appeared to not have set very well - so just stuck it in the freezer and that seemed to have helped.

I may try to do the no-bake way for our company X-mas party.

Wow, this cake is soooooooooooooo GOOD!! I just can't stay away from it!! Seriously, I made it last night, and it will be gone this evening. It's well on it's way, already. It's so pretty too!! It looks like a party!!
Next time I'm gonna make sure to add the chocolate swirls on top & the nuts too.

Netrition says the Quick Packs have been discontinued. What would one use for a substitute? I have regular granular Splenda.
