LindaSue's 'Orange Cream Cake' step by step with Pics

Hey everybody,

Saw this recipe on LindaSue's site, and thought I would give it a try.

I personally really like orange flavored desserts, that is why it caught my eye. But, most bakeries usually don't offer orange flavored pastries, probably because they are not that popular. Anyway, if you like orange flavored goodies, you should give this a try.

I don't know why LindaSue only gave hers a 3 out of 5 stars, I would give it a 4 to 4.5. Also, you can NOT mess this up, it is very easy, and you can taste as you go.

Here is my reproduction with only a few small changes. By the way, this looks a lot more difficult than it really is. I only post so many pics because too often at the end of the recipe people will scratch their head and wonder where they went wrong. To help avoid this, I try to put a picture of every step :-)


Start with a blend of your 3 favorite sweeteners, for a total of 1 1/4 Cups sweetener mixture.



Mix together well. I used 1 1/4 Cups Erythritol, 1 Splenda Quick Pack, and a sprinkle of Stevia



Combine 1 cup sweetener mix, 1/2 Cup butter, and 1 egg



Mix until smooth



Grate 1 Teaspoon Orange rind



Combine 1 1/4 Cups Almond flour, 1 Teaspoon Orange extract, 1 Teaspoon Orange rind, 1/4 Teaspoon Baking Soda, 1/4 Teaspoon Cream of Tarter



Mix until smooth



Add some Pineapple (optional). I added this because sometimes I find things made with Almond flour a little dry. I think it would have been fine without, but it did add a nice flavor and texture. I used about 1 1/2 ounces, which added about 5 carbs to the entire batch. Be sure to buy the Pineapple in Juice, and NOT in Syrup!



Fold in Pineapple. Do not mix with blender.



Grease a 7 X 11 baking pan



Spread mixture evenly into pan



Bake at 350 for 15 - 20 minutes. Do NOT overbake. Almond flour already has a tendenacy to taste dry, it doesn't need any help...lol



Combine ingredients for filling, 12 ounces Cream Cheese, 1 egg Yolk, 4 Tablespoons sweetener mix, 1 Tablespoon DaVinci Vanilla syrup, 1/2 Teaspoon Vanilla, and 1 Teaspoon Orange extract. Note that the original recipe calls for 4 ounces cream cheese, and 8 ounces Mascarpone. I used 12 ounces of cream cheese instead because Mascarpone is very expensive. Also, the original recipe called for 1 Teaspoon Vanilla, but I only had a 1/2 Teaspoon left, That is why I added the 1 Tablespoon of DaVinci syrup. One more change, the original recipe called for 2 1/2 Tablespoons sweetener, but that wasn't sweet enough for my taste, so I bumped it to 4 Tablespoons.



Mix until smooth. Also, VERY IMPORTANT......TASTE!!! This is the main ingredient in the recipe. Do you need more sweetener? Do you think it is missing a little Vanilla? Now is the time to tweak.



In a separate bowl, whip 5 ounces Heavy Cream until stiff.



Fold ingredients together, do NOT use mixer.



Cut out a 4 X 8 piece of cake to fit a 4 X 8 pan.



Place cake in bottom of pan. This does NOT have to be pretty. It will still turn out fine after the toppings are added, and still cut like a regular cake after chilling.



Again, this is very fragile, but it will not affect the outcome.



In another bowl, combine ingredients for the cake glaze. I used the remaining sweetener mix (about 2 Tablespoons), 1/2 Teaspoon Pineapple extract, 1 Teaspoon Coconut extract, 1/2 Teaspoon orange extract, and Water as needed for consistency.



Brush glaze onto first layer



Ready for topping



Spread on 1/2 of the cream cheese mixture



Add remaining cake / crust



Add second 1/2 of glaze



Add second 1/2 of cream cheese filling



Spread about 2 Tablespoons coconut on a baking sheet



Toast on 375 for about 10 minutes or until brown. Stir every few minutes if it start to look like some parts are toasting quicker than others.



Sprinkle coconut on top.



ENJOY!!!

That looks AMAZING!!!!!!!! Unfortunately I couldn't make it for me as I'd eat the whole thing in one sitting, but it's most definitely on next time I have the girls over!

OMG....love the step by step pics and this is going on my to try list. (Wish I'd have seen it for yesterday--it was my b-day and I could have used this treat). I will have to wait until I have friends over, because i think I'd have portion control problems.

Bobo, this looks so good and like you, I love orange flavored things. Creamy orange shebert was always a favorite, oh, shhhh, I didn't mention that. Anyway, I really like your step by step pictures, helps a lot when you are making something for the first time, keep em coming.

CarrollKay, and all............this is a little time consuming, but most things worthwhile are :-)

If you are not a big fan of orange flavored cakes, cupcakes, or other orange flavored desserts, then you probably should not waste your time because there are much easier dessert recipes on here.

If you are looking for something very orangey, very sweet, and a little different, then you should probably take a crack at it :-)

I'd add one tweak only, some SF Marmalade and some fresh lemon in the glaze...looks YUM-0!

Did you taste the cake without the filling? I would love to have a basic cake recipe but I can't do the cream cheese obviously- maybe the cake alone or with fruit?

Like I mentioned earlier though, you must really like orange flavored desserts to make it worth all the effort.

Up next, stuffed peppers and real breaded cheese sticks with just 2 carbs for an entire 4 ounce serving!


Islandgirl........I'll bet lemon and marmalade would lend themselves nicely to this recipe


DorianH.........I do believe that crust has many uses, but I don't know about cake (at least in the traditional sense). It is very thin, very wet, and does not hold together real well (as you can see from the pics when I tried to take it out of the pan). Plus, if you have ever cooked with almond flour before, you know that the texture is a lot different than regular flour, but you do not notice that difference in this recipe.

To all...........if anybody tries this, please let Dorian know what you think of the crust part of this recipe before you add the cheese

Thanks for the nice review, bobo36us. I'm glad to hear that it turned out so well for you. I bet the pineapple gave it a nice flavor. I'm surprised that you didn't think that the filling was too salty made with all cream cheese. I made a high carb tiramisu for my husband and I once and thought I'd save money by using all cream cheese instead of part cream cheese and part mascarpone. It was so salty that it wasn't edible. I seem to recall that it was going to cost me about $30 to make the recipe as it was written and using cream cheese knocked about $8.00 off the total cost.

DorianH, it's been a long time since I made that recipe but I seem to recall that the "cake" is really sort of a sponge bar cookie rather than a true cake. I think that a pound cake with orange flavoring and zest would work better for a low carb orange cake. It does have cream cheese in it though. This Coconut Bread recipe might also work for a cake and it doesn't have cream cheese in it.

I am very happy with the way this turned out. I think it is actually getting better

I'm thrilled this got bumped - I LOVE orangy and lemony desserts!!! I once sent in my recipe for an orange/kahlua cheesecake (this was in my pre-low carb life) to Kraft Foods and they liked it so much they sent me a check for $500!!! LOL.

I'm printing this out (pics and all LOL) to make for hubby's b/d coming up!
