Brown mushrooms? another name?

Hi Charski, this recipe sounds so delicious. Would you please be a bit more specific about which kind of (brown) mushrooms I should shop for? I am not used to any other than the little white "button" ones and the Portobellas.

Hi islesgirl, I don't think it really matters - you could use most anything. I've used the portabellos and the criminis, last time I used dried, reconstituted mushrooms cuz I have this HUGE bag I bought! I'm not even sure what kind they are - it was from an Asian market and I can't read the labels!

Oh yum! Making this for dinner tomorrow! Wonder if I could use homemade beef stock instead of the concentrated stuff? I'll boil it down a bunch so it concentrates. Thanks for the recipe.

Shoot, I wish I could do these for Father's Day for DH, but we're up at our cabin and I know I can't find shortribs in our little town. Oh well, I'm going to do them next week when we get back. Also, the Turnips and Carmalized onions recipe. Thanks so much. By the way, if you go to AJ's, get some of the Goldwater chilie mix in the box. Totally low carb and the best ever.

I've made these twice now (made them again last night) and this dish is WONDERFUL! My DH can't get enough of these. I used chipotle chili powder and didn't have any beef paste and they still turned out amazingly well. Thanks Char for another fantastic recipe!!!!

Ang, the chipotle chile powder is my fave! I'm so glad you like this recipe. It's cooling down sufficiently here to make them soon, although we have had the DRIEST November in recorded history for our area - less than an inch of rain for the month. That is NOT good!

The next rainy day I'm gonna make these too!

Charski, just wanted you to know I've made this dish about 5 times in the last 2 months......The first time I went to a butcher and it was so expensive that I swore I'd never make them again (and they were small too)...Then I remembered you said you got yours at Costco - went there and bought about 6 huge packages........Guess what I just had for dinner tonight?

I love this dish because I can eat off it all week here and there...tonight for example I just walked through the door and nuked some up. I find this to be a VERY helpful meal as far as losing weight goes - I think because of the high fat content.

Yay, Charski- You're my hero. Thanks so much for ANOTHER great recipe.

Sam's had just put out the Red Sticker meat, which was going out of date the next day, when I got to the meat counter. Another lady took 4 or 5 packs of these short ribs, I got the last one.

I made Char's recipe, with Ultra beer instead of wine, since that's what we had. We had an amazing dinner last night! Thanks so much for posting this recipe! I can't wait to try it the way it's written.

We just watched Rick Bayless make a Mexican version on his show, "Mexico - One Plate at a Time" which I'm gonna try - I love shortribs!

I haven't but I think others upthread have tried it. There's no reason it wouldn't work, the stock just won't concentrate down as far - if you use a pressure cooker though, you could remove the meat when it's done and simmer the sauce down a bit to tighten it up if needed.

Thanks, Charski......I don't know how I missed those threads :blush: Once I buy the shortribs, I'm going to use my electronic pressure cooker. I really like it much better than the crockpot.

I just put a panful of these in the oven. Can't wait! It's a blustery rainy day, just right for a "comfort food" meal.

We'll also have a spinach salad with Asian dressing and some quinoa. YUM YUM in my tum tum!
