This is delicious. Made with 2 lemons and an orange. Made 16 cupcakes. Going to cut in half and make lemon curd for inside. Than frost with coconut whipped cream. Yum!

I've made this cake with mango puree and protein powder. The protein powder made the cake rise really high and dried it out a little bit. It was still VERY moist though.

Still love this recipe. Made into cupcakes today and used limes and clementines. Really tart. Had to add lots of sweetener. Made microwave lemon curd, added unsweetened coconut, and filled the centers. Also frosted with cream cheese, hwc, lemon curd, gelatin, and more sweetener. Sprinkled with more unsweetened coconut. Very yummy!

Are these whole eggs? I'm used to just yolks in curd and I'd like to try...
