Asian Slaw Recipe

1/3-1/2 head Cabbage - Green (Savoy or Chinese cabbage would work too)
1/3 cup Onion, shredded
5 Mini Carrots, shredded
1/3 cup Cucumber, shredded
1/3 cup Cilantro leaves, rough chopped
2 small Serrano chiles, shredded or minced with seeds
1 small Lime, juiced
2 cloves garlic
1/4c Olive Oil (or Coconut Oil) (or less if you desire)
1/8 tsp Sesame Oil
1 tsp Grated Ginger (or 1/8 tsp ground)
Salt/pepper to taste (or sub the salt for a smidge of soy sauce)
2 tsps Fish Sauce (optional)

I use a mandalin on the fine setting and run most of the veggies through it. Combine everything and chill for at least an hour or two before serving or overnight. The slaw will make more of it's "dressing" due the moisture in the veggies so let it be kinda on the dry side when you first make it.

I use this on fish tacos and with fish and chicken all the time. It's also awesome with pulled pork on in pulled pork tacos or sandwiches.

It's just a very fresh tasting slaw for the summer! (BTW, it also rocks with a tiny bit of fresh beet root grated into it - raw).

That sounds good. Are the chiles hot or mild? How do you think it would taste if the chiles were left out?

It tastes great. You can make it to your heat preference. You can even sub out some sambal oelek (garlicy chili paste) or Srirachi (garlic chili paste) for the peppers. We just like the bite and crunch and heat of the serranos that are slivered paper thin. Also removing the capsicum veins and seeds will help control your heat.

If you use fresh jalapenos and slice the meat off the center seed pod, you have almost no heat and only the crunch left. They are almost like a green bell pepper at that point.

It makes about 8 1/2 cup servings and no idea on the carb count. You can put it into ****** though! I would imagine that it's under 4grams of carbs per serving.
