Brown Sugar Replacement

I am desperately searching for a replacement for 1 cup of packed brown sugar. I am sure this has been addressed on this forum before but I can't find it. Any help would be greatly appreciated.

Kevinpa,

Wow!!! I just found your pseudo brown sugar right below this thread. Do you think it can be used as is to bake with or is it mainly a taste thing to give the appearance and feel of brown sugar as a topping or mix-in. Thank you.

Yes momo it can be used to bake with and mimics regular brown sugar quite nicely. I made up a 2 lb bag and I am using it right out of the ziplock.

this recipe is absolutely terrific--I've been using it on the new oatmeal recipe every morning, and it is a dead ringer for brown sugar--diabetesweet and I are not friends, so it was really wonderful to have Kevin's recipe. he is such an incredible resource for this board--

What great replies!!!! I knew I would get fast responses here. I am a lurker but as you can see, seldom post. I am going to order the Whey Low Gold and yacon syrup for Kevin's mix and see which I like better.

I have had a few digestive issues with diabetisweet too, sigh.

It's so great that there are so many people committed to the low carb WOE.

Kevin, I have loved many of your recipes. between you and Linda Sue, I can always come up with something for dinner.

you can order yacon syrup online (I think amazon carries it)--it is made from a root and is a bit like molasses--but totally low glycemic as the primary component is inulin--a tiny bit goes a long way, and the resulting flavour is fantastic

I posted on the old thread and I will give you an up-date. I continue to use Whey Low and it still does not impact my bgl and I am a Type 2 diabetic. As a side note, Dreamfields makes my bgl rise. So, I guess each of us is different in our bgl response to different products.

Thanks for the update, Dixie. I see on the old thread that Kevin did have a negative bgl response, so you sure must be right that everyone responds differently. I'm not diabetic myself, but I had remembered reading some posts with a bit of a debate about Whey Low, so I just wanted to give folks the heads-up to research this for themselves.
