Peanut Butter Cheesecake Bites

These are delish! I found this recipe a few years ago and switched the sugar with sweetener. If you're a peanut butter lover like me, you'll probably like these. I've tried them with low carb peanut butter and they turn out very good.


Peanut Butter Cheesecake Bites

1 (8 oz) package of cream cheese, softened
1/2 cup soft Peanut Butter
1/4 cup sweetener (I used Sugar Twin)
1/2 tsp. ground cinnamon
1 tsp. vanilla extract
Unsweetened shredded coconut

Mix all the ingredients (except for shredded cocunut) in a medium-sized bowl with an electric mixer. Scrap down sides of bowl as needed. Chill the mixture in the fridge for approx. 30 minutes.

Then roll the mixture into 3/4-inch balls. Then, roll the balls in the shredded coconut to coat them and then chill them for an additional 15 mins or so before serving. Recipe makes approximately 25 - 30 bites.

These are delicious and very hard to resist. I had to restrain myself from eating them as it was getting out of control - I'm such a peanut butter nut. The combination of cream cheese, peanut butter and cinnamon is awesome together. Very, very tasty and simple treat.

USE PEANUT FLOUR FOR THESE?

Do you think you could use peanut flour (instead of peanut butter) to save carbs/calories? I just received my shipment of Peanut Flour and am looking for ways to use.

What kind of consistency does peanut flour have? Is it creamy at all?

Question: is Carb Options peanut butter still on the market at all? I can't find it anywhere in my area. That's what I used to use for this recipe. Now I usually use the Splenda sweetened kind. Very hard to find in my area though.

This is what I got for nutritional stats:

25 bites = 60 cal/ 5g fat / 0g fiber/ 2g pro / 1g carb
30 bites = 50 cal/ 4g fat/ 0g fiber/ 2g pro / 1g carb

Just found this recipe in the LC Recipe Room ------> Peanut Butter Cheesecake Bites - LowCarbFriends Recipes

These are excellent and I used a new kind of sweetener I found at the store called IDEAL No Calorie Sweetener. I used 6 packets of those with Smuckers Natural P.Butter. Here is my picture:

I'm gonna have to try these! I'm not a big fan of coconut in general, so I may try rolling them in cocoa powder or chopped nuts instead. They look great though!
