The cauliflower recipe is fantastic, and so is the zucchini tweak. I haven't tried broccoli yet, but it looks beautiful. I'm also going to make a spinach variation.

If you're talking about the cold, cream-cheese covered, veggie topped pizza on a crescent roll crust, then you probably need more of a bread-y type crust like the original I would think.

I you have ingredients to make Kevin's Cake and Cookie Mix, that would definitely be the best. If I were doing it, I'd probably whip up a batch of the carbalose version with just a tad more sweetener since the crescent rolls had kind of a sweet taste...if I remember correctly.

This is the recipe I use to make my pizza dough:

2 C. Kevin's mix
1/2 tsp. salt
1 tsp. sugar
2 tsp. yeast
3/4 C. warm water
2 tsp. extra virgin olive oil

When I make his mix, I usually sub out whole wheat flour for about 1/3 of the carbalose since I'm sensitive to the taste, but I swear it tastes just like regular dough.

If you don't have all the ingredients on hand, but just have Carbquik, you could try making a basic biscuit type dough, but I'm not sure how that would work out. Maybe someone else will post another idea.

Hi, new to the board but just made veggie pizza yesterday (Thanks to Cleo's oopsie rolls!!!) The following recipe is for the original with crescent roll crust but substitute the rolls instead - It was great (Also, I used only one roll so I cut down the ingredients)
Original Recipe
2 pks. crescent rolls
1 8 oz cream cheese, softened
1/3 cup mayo
1/2 c sour cream
1/2 pack of Hidden valley ranch original salad dressing
Veggies of your choice
Press crescent rolls on baking sheet, sealing holes. Cook per directions. Allow to cool.
Mix the rest of the ingredients (except veggies) and spread over the cooled dough.
Add veggies on top of the spread. Chill before serving
To make it Atkins friendly
I used about a T. of mayo & a T of sour cream, 1 oz cream cheese and sprinkled in the hidden valley ranch until I liked the taste. I swear I am in love with Cleo and all her recipes and ideas. Thanks so much for all you share!!

Thanks, I really love the original veggie pizza and this comes really close. I find the oopsie rolls are a perfect substitution for the crescent rolls. Someone posted that they make a cookie sheet tray of the oopsie rolls (was it you?). However, individual veggies pizzas would be good too, you could make all different kinds, with different toppings. Hope you enjoy it.

Sorry, I don't know how many carbs - I didn't do ****** - there are too many variables - what veggies you use/how much mayo, cream cheese/sour cream you add to adjust to your taste. I can't believe it is much - if you make it put the ingredients you used to make it on ****** and that should tell you how many carbs. Sorry couldn't be more specific.

I am actually making this for dinner tonight, but on a sheet of Joseph's Lavash bread b/c I found it at walmart.

The oopsie idea sounds great though, I might try that tomorrow!

OK, since I got home early, I made an oopsie crust. I spread it thin in a cookie sheet on parchment paper. I had added salt pepper and garlic salt to the batter. Once I had the crust spread, I sprinkled a very liberal amount of parm cheese over it. Baked it for about 20 min as it was nice and brown.
Cooled in the fridge, topped it with the cream cheese/mayo/ranch spread and then cauliflower, carrot shreds, broccoli and shredded mexi blend cheese. I also added some chopped grilled chicken breast b/c I had it in the fridge.

Chilled it in the fridge while I went and walked on the beach.

Just had some...

VERDICT

I can not tell that this is not the high carb recipe. I can hold it in my hand, the crust has a nice flakey texture. I could serve this to someone who never heard of an 'oopsie' and they would be none the wiser. AND it's pretty
