Quaker Oats Chewy Granola Bar Copy?

Just read today that Quaker Oats has introduced a "Dark Chocolate Cherry" chewy granola bar!! I found this recipe by Rosie on these boards and, like her, wonder if anyone could help me make this into a chewy bar? I so want to make a dark chocolate cherry bar!

Thanks for any and all ideas!

BASIC LC GRANOLA RECIPE

1 cup unsweetened shredded coconut
1 cup chopped pecans
1 cup chopped walnuts
1 cup chopped almonds
1 cup sunflower seeds
1 cup flax meal
one half cup bran
4 ounces coconut oil
1 tsp cinnamon or less

Directions: mix together coconut and nuts, drizzle with oil,

Spread on a cookie sheet and toast at 325 degrees, tossing every 10 minutes
For about 30 to 40 minute

Per serving (1/3 cup) - 5 effective carbs, 8.5 grams of protein

Jiggle no more, as a binder you should maybe google Kevinpa's recipe for "high fructose corn syrup" knockoff or else you could make a lc marshmallow cream or perhaps a mixture of both. You could also throw in some peanut butter and then press the ingredients into a "bar" recipe. Bake as directed then cut them apart.

Wow Kevin that link with the Easter Eggs is amazing! Makes me wish my blood sugar would accomodate the dried fruit right now. Maybe this fall I can try making some of the LC cranberries and using a little dried apple without having a bad time.

I would think if you added or subbed in walnuts and a scoop or two or whey protein, along with the pb, you would have a really good protein bar without all the preservatives?

Kevin, I had forgotten about your fruit and seed ball recipe! I'll have to check the Quaker Dark Chocolate Cherry box at the store and see what they look like, but guess I'll add some LC melted chocolate, some of your LC cranberries, and maybe a little cherry flavoring?

Oh, yea, life's good over on the LC side!!
