Chocolate Oopsie Roll...Need Help with Filling...

I made the batter...It is rolled ready for a filling...I will post pics but I need help with a filling.

Ingredients (true to Oopsie - LaNaural')

6 eggs, separated
6 oz. cream cheese
1/2 cup cocoa powder (unsweetened)
1 tsp vanilla extract
1 tsp coffee extract
Dash salt
1 Splenda quick pack

What I have...
Cream cheese, butter, ricotta cheese, sour cream... Any ideas? As soon as I get one..I will roll the cake and post the pics...PLEASE HELP!!!!

How about using the ricotta. I like to add a little vanilla DaVinci's (or splenda and some vanilla extract) and maybe some LC choc chips or carob chips to a little ricotta. . .tastes like a cannolli filling. MMMmmmmmm. . .let us know what you ended up with.

I am taking a 2nd shot at the choc. oopsie roll tonight and am going to use your recipe. I plan on filling it with Linda Sue's buttercream icing. That consists of butter, cream, splenda, and xanthum gum.

Here it is...

I wanted to make another roll after I tackled the Pumpkin roll...I wanted to stay closer to the Oopsie (I hope I do you proud Cleo!)...The Pumpkin was fabulous but this...OMGosh! I can't even describe...The filling ended up being a good choice...Thanks so much for everyone for your help with filling ideas...

Chocolate Oopsie Roll Cake (Awesome)

Oopsie Chocolate Batter:
6 eggs
1/2 tsp cream of tartar
1/2 cup Unsweetened cocoa powder
1 tsp Vanilla Extract
1 tsp Coffee liquer

Filling:
1 (8-ounce) block 1/3-less-fat cream cheese, softened
1 tsp vanilla extract
1 Splenda Quick Pack (or 1 cup granular, your choice)
1 cup Ricotta part-skim (I whipped it first)
2 (1/2-ounce) bars unsweetened baking chocolate
1 tbsp Davinci Hazelnut sugar free syrup

Preheat oven to 300F. Place wax paper on at jelly-roll pan and spray with cooking spray.

For batter: Separate eggs. Whip egg whites with cream of tartar. In another bowl, beat egg yolk with Splenda, extracts, cream cheese, cocoa. Incorporate both.

Bake for 30 minutes. Remove and let cool for 20 minutes. Roll on a teatowel sprinkled with cocoa and Powdered Eyrthritol. Let rest while making filling.

For filling. Melt chocolate in microwave. Whip the ricotta cheese in a small bowl; set aside. Add the chocolate to the softened cream cheese and mix well. Add the Davinci Hazelnut syrup, vanilla extract and Splenda. Add the whipped Ricotta. Blend well.

Unroll cake and spread filling. Re-roll cake...

Another thought for your filling is Carbsmart Ice Cream. Let the ice cream get a bit soft and spread it on your cake, roll up, wrap in saran wrap or foil and freeze..

That would be awesome CarolynF! I will do that for a birthday maybe. This filling turned out delicous! It is so creamy and smooth and chocolate-y! You could sub whipping cream for the ricotta, though...But I didn't have any on hand!

It is great to have in the freezer..and you can slice as you go.. I might have to make
