Thank you guys for being so supportive and giving this recipe a shot! I have to say, it's something I really feel finally gives a regular pizza a run for its money. It was kind of a lark in the kitchen, too. LOL I was like, "I wonder what would happen if..."

You're not an idiot!

You take frozen cauliflower and cook it according to package instructions. Then you can either chop it with a food processor, rice it, or (as I do) shred it on a cheese grater with large holes.

Addendum to yesterday's "sad story". . .

Well, I thought I'd come home tonight and warm up one of last night's extra mini cauli-pizzas for myself. . .That darned DH had EATEN ONE OF THEM on me while I was at work!

This, even after he asked me last night if he could have them and I TOLD HIM that I was gonna put them in the fridge TO HAVE LATER IN THE WEEK. I cannot beleive he thought I meant FOR HIM to have later in the week?!? I say again. . .AS IF!!!

The thing I think is really funny/great about this is: he doesn't know they're cauli-pizzas.

Kudos, Cleo.

(Now, maybe if I made them with broccoli, my little DS's would eat them. . .Hhmmmmmm)

Oh My Gosh!! This pizza is sooo good, and I didn't even have to make it! My sister, who is AdvocateMom here on LCF's made it today and brought me over a slice tonight!! I am going to make this this weekend!! Thanks Cleo you are truely a creative and innovative cook/chef!!

This is just frickin great I still have not got the ooppssie rolls right and now I have to try the cauli pizza crust. This LC living is going to be the death of me. The crazy thing is I love to cook and am pretty good at it the baking though not so much lol

Cleo, I mostly lurk over on the Century Club boards, but I love reading your new recipes (and the blog). Last night I dreamed that I ordered a delivery pizza and was taking a walk with my dad, who asked if it was okay for me to have pizza since I just had lap-band surgery about a month ago. I told him it's fine because I ordered Cleo's low-carb cauliflower pizza. I think this means you should sell the idea to a pizza franchise. Papa John's, meet Mama Cleo's.

Cleo! I bow to you for this recipe. lol I made this tonight and was a bit skeptical because well even though I sprayed my pan with pam 1 of them stuck a lil and I was like no way is this flimsy looking crust going to be "held"...and it WAS! not only that but this tasted JUST like the take out pizza we used to get. I MEAN exactly! My daughter took a bite of hers before I even got a taste of mine and pizza is her FAVORITE food so I was waiting on her reaction and she said "OMG MOM THIS IS SOOOO GOOD!" My husband was eating it like crazy and I asked them what they thought it was made out of since they know the "main" ingredients to most the low carb stuff my daughter said "EGGS!" and my hubby said CAULIFLOWER! I was so shocked because no way would most people know that it was eggs and cauliflower. Didn't have a bit of taste to me like that. My husband has grown to love cauliflower so he was happy with that. heh

I also made the bread sticks but instead of serving them as bread sticks I went ahead and made them individual pizzas (with cheese/toppings and sauce) SOOO GOOD! I will be making this A LOT! I need to buy stock in cauliflower. lol (I used the frozen kind as well and I got 2 pizzas and bread sticks out of 1 bag! awesome!!!

I ate quite a bit because I knew after dinner I was going to a girls keno game and there would probably be nothing but high carb foods there. Well most of the people hadn't seen me since I lost weight so they were all like WHAT have you been doing? So I got to tell them and I even mentioned the pizza.
They figured I was just starving myself. I said HECK NO! I'm an eater!!!! But I didn't eat anything while I was there but a celery stick and a couple pieces of broccoli. I passed up the massive cakes, chips, breads etc. I am not usually this full on a meal so I am thinking this one is a GOOD one! I did come home and eat 2 of the bread sticks COLD because I loved cold pizza and they were AMAZING cold!

This is definitely my new low carb favorite. I may not can master oopsie rolls but this I can handle.

Just wanted to let you guys in on my ditzy moment!

I used fresh cauli to make the pizza. Riced it, Measure out a cup of it, uncooked. Cooked it in the microwave. When it was done cooking it was like 1/4-1/3 cup. I was thinking to myself "man, that's not much cauli" went ahead and mixed it in with the cheese. Baked it. Tasted lovely! I ate the whole thing, myself!

Weighed myself the next morning! Up 2 lbs! Well, no wonder, I ate over a whole cup of cheese myself! Then I got to thinking about the recipe. I was supposed to use a cup of COOKED cauli! No wonder I ate the whole dang thing! I probably wouldn't have ate as much if I'd followed the recipe correctly!

Oh, well, the 2 lbs are gone, and I'm thinking of trying it w/the correct measurements this weekend.

What type of pizza sauce does everyone use? I used Ragu's Pizza Quick (I think it was only 3 carbs) and it is soooooooo salty!! I can't hardly eat the rest of the pizza because all I taste is salt. When I am lcb'ing I am more prone to notice salt for some reason and don't like it much.

What does everyone else use?

I use the cheap pizza sauce in the WalMart brand. It's fairly low-carb, technically. I don't use much sauce. It's mostly for flavor.

pizza question

Hi Cleochatra,

I absolutely HEART your recipe, like everyone else here. I made it last night, and am wondering how thin you spread the crust in your pan. I doubled my recipe and spread it into a cookie sheet for a rectangle shaped pizza, and it tasted great, but I wanted the crust to be crispier. It was about a half inch thick, I'd say.

Should I not have doubled, or just not cooked it long enough? Your crust looks a lot crispier than mine was.

Do tell!

Laura-- I tried to press it down to closer to 1/4" when possible. I especially checked towards the center, because it's easy to make edges too thin and the center too thick.

Someone else (I think Barb) stated she was able to flip the crust over and bake the other side.

I think that especially with larger crusts, they need a little longer to cook in order to completely have them be finished. Even still, the crust usually settles well and is still pliable and able to be used with little problem once the toppings are added.

I like to slide a spatula (metal) around the edges just to ensure the edges are done and the underneath bits are cooked all of the way.

yes I use the walmart (Great Value) brand it's lower in carb than the name brand they sell and its yummy! I hardly use any as well just enough to coat but not glob.

I also flipped my crust because I wanted it extra crisp, once I was able to peel the one up that stuck (lol) I could flip them easily. I will either use parchment next time since I have it or I need some silicone mats.

I'm definitely going to try this this weekend. I usually make my pizzas with a soy flour/flax crust but this looks like it would be less heavy.

I tried the breadsticks last night. Heaven! Dipped in pizza sauce or ranch dressing. Hubby liked these as well and said he couldn't really tasted the cauliflower in them like in the pizza crust. (I used double the cauliflower in the pizza crust than I did in the breadsticks...) Gonna have to try the flipping of the crust next time. I like my crust a bit more crisp than what I had

these recipes make so happy!
