wow.. I just realized I made my oopsies wrong! I had my laptop right there as I made them, so I have no excuse! For some strange reason I read 6 oz. cream cheese. They still turned out okay, I thought they were a little cream cheesy tasting.. duh!

Were they a wee bit too cheesy? Hey. That's how I ended up with the recipe in the first place--I accidentally doubled the cc!

I have a hard time eating them anymore, since they're pretty eggy tasting. Shocking, I know. lol I never fully recovered from the omelet incident of 2004.

hi everyone!

I am trying to limit my cheese intake.
Without going thru 33 pages of Oopsie posts, can someone post a recipe where it can be made without using cream cheese?

Then, I PROMISE to read every single page

Some have stated success using soy cheese. The original Atkins recipe calls for mayonnaise, but only half the amount I tend to add for cream cheese.

Thanks Cleo. I have made them your way and they are FABULOUS! I just want to try to lessen my cheese intake. Perhaps when I'm maintaining, I'll make them with cheese.

I know this is still a cheese, but I use ricotta instead of cream cheese. I know some use cottage cheese as well. This doesn't help you with reducing your cheese intake, but it does give you some alternatives. I remember reading about the usage of sour cream too. I've never tried it though.

FYI - This may not work for all but the last couple times that I made them I haven't use the cream of tarter and I've taken the eggs directly out of the fridge (I keep them in the back on the top shelf so they are very cold) and the whites got super duper stiff. So I'm not sure I put much stock in the fact that you even need any cream of tarter and that you have to get the eggs to room temp in order for the whites to stiffen up.
HTH those who are thinking about making oopsies......

Alli, someone made them with avocado instead of cream cheese.They're pretty good this way. I have also them with chia gel instead of cream cheese. I believe some people have used mayo.

I too use cold eggs and it hasn't made a difference. I like using the cream of tarter because it seems like when I do the whites do not break down as easy when you are doing the stir in.

I've been wanting rye bread, so I made caraway Oopsies today:



I added about a teaspoonful of caraway seed to the batter, then sprinkled another teaspoonful on the tops. They smell heavenly!

They're incredibly yummy, too!

I love the flavor of caraway, and these Oopsies turned out to be the perfect solution to not having rye bread.

I slightly cracked the caraway seeds, using my mortar and pestle. I added 2 teaspoonfuls to the egg yolk mixture, and then I used another teaspoonful to sprinkle on the tops.

Yep! Sure am! I'm about ready to buy another mortar and pestle, a bit larger size. They're great when you don't want seeds totally ground up, but just cracked a little to release the flavor. I always use fennel seed when I make a pork roast or sausage, so my little mortar and pestle gets a lot of use!

BTW, I just noticed that in my comment under the pic of my Oopsies, I said I used 1 teaspoonful of caraway in the batter. That's wrong. It was 2 teaspoonfuls.

I did something else with the Oopsies, too. They seemed a bit "wet," maybe it was oil from the mayo I used, but I had just removed a batch of beef jerky from my dehydrator, so I popped the Oopsies in and ran them at the lowest temp for about 15 minutes. (Could have been longer, I didn't actually time it.) It made them very bread-like, IMO. Next time I make them, I'm going to turn off the oven and open the door just a crack, but leave the Oopsies in until the oven is cool. Like you do with cheesecake. It'll be an experiment.

(Leave it to me to do something seedy with Oopsies! )

It's funny how different peoples tastes are..... I like the flavor of rye, but can't stand caraway seeds. (Makes me think of bugs! yuck) One of the reasons (main reason) I don't like Pizza Hut Pizza,,,too much caraway seeds in their sauce. (course any is too much for me.) But that's me... To each his/her own. I seem to have really odd taste buds. But I think it is everyone else who has odd tastebuds.

Never heard of Brylane! I sure wish I could find muffin top pans locally at a decent price. Personally thats even higher than I'd like to pay, but just might if I could get them locally, and not have to pay shipping on top of the price. Am I a cheapskate? Maybe so. But I don't really think I'd use the pans that much. And I'm actually afraid the "holes" would be smaller than I would like anyway. Oh well.
