Wish I did, but I don't know how to put those things on computer. The next time I make them I will see if hubby can do it for me. Or maybe somebody else will make them and take a picture.

Another useful oopsie!

Muffins! I just made oopsie muffins. Cinnamon ones, but it got me to thinking... blueberry... banana nut... etc..

Just take your oopsie batter and add whatever muffin ingredients you love to the yolks and mix as normal. Pour into a sprayed well (even for nonstick pans!) muffin tin and bake until done. Mine are still in the oven after 12 mins, so we will see how long it takes....

Wow, oopsie muffins... With extracts and syrups the variations are endless and induction friendly.

what about motzarella (sp) sticks, take a motza chees stick and cover with oopsie batter just like the corndogs and bake...hmmmm. with a little lc spag. sauce...yum

Chocolate Oopsie Roll Cake (Awesome)

Oopsie Chocolate Batter:
6 eggs
1/2 tsp cream of tartar
1/2 cup Unsweetened cocoa powder
1 tsp Vanilla Extract
1 tsp Coffee liquer

Filling:
1 (8-ounce) block 1/3-less-fat cream cheese, softened
1 tsp vanilla extract
1 Splenda Quick Pack (or 1 cup granular, your choice)
1 cup Ricotta part-skim (I whipped it first)
2 (1/2-ounce) bars unsweetened baking chocolate
1 tbsp Davinci Hazelnut sugar free syrup

Preheat oven to 300F. Place wax paper on at jelly-roll pan and spray with cooking spray.

For batter: Separate eggs. Whip egg whites with cream of tartar. In another bowl, beat egg yolk with Splenda, extracts, cream cheese, cocoa. Incorporate both.

Bake for 30 minutes. Remove and let cool for 20 minutes. Roll on a teatowel sprinkled with cocoa and Powdered Eyrthritol. Let rest while making filling.

For filling. Melt chocolate in microwave. Whip the ricotta cheese in a small bowl; set aside. Add the chocolate to the softened cream cheese and mix well. Add the Davinci Hazelnut syrup, vanilla extract and Splenda. Add the whipped Ricotta. Blend well.

Unroll cake and spread filling. Re-roll cake...

You guys are so kind to me. I am just a dork. I like to eat pizza and cheesecake.

Would you believe that bottom crust is made from oopsie? Not an entire oopsie either. I need to rework the recipe, but it is an awesome, smaller, very dense cheesecake. It fed four of us!

babydollsea-- I appreciate your vote of confidence! I bought one of those tiny springform pans and decided to make a tiny cheesecake, and it ended up being very filling. Like I said, it fed four of us. And the blueberries (are my favorite) and lent the right touch. I am going to work the recipe just a little more so that it is perfect.

It's induction friendly, too! Like I said, it's not *quite* right. I want to play with the recipe some more. I got the crust perfect! Now I need to twiddle the knobs of the ingredients!

Well get to twiddling Cleo! I am ready to eat this thing!! One of my fav desserts!!! My goodness it is beautiful!! Like Baby said...you need to really put together a cook book!!

Thank you, mary! I threw away two things today because they were TERRIBLE! But you have to try anyway. There are a lot of things I need to eat.

I have a list of things I need to conquer this weekend, foodwise.
