I think that is how it works with flax. Most of it goes right through you.

I've tried various versions of this. They are fantastic baked and microwaved! Also you can sub cream cheese for the butter and OMG! I've also mixed pumpkin in and that was good too. I did try making a savory version with oregano and spices and didn't care for it at all. So, I'll probably only make the sweeter versions of this.

i like mine a little less eggy in texture. with this combo, it comes out very "bread-like".

1 egg
3T golden flax
3T oat fiber
1 1/2 T sour cream
2 packets Truvia (or 2T davinci/torani)
2T HWC (omit this if you use the liquid splenda)
1/8 tsp salt
1/2 tsp baking powder
optional...SF choc chips or chopped nuts

micrwave as usual.

OMG! First, let me say that had I known about this kind of thing the first time I tried Low-Carb eating I probably would not have stopped and would be a mere shadow of my former self by now.

Second, I can't say how grateful I am for having happened upon this site and this marvelous muffin recipe.

I made the muffin for the first time and couldn't be more pleased. Used golden flax and oat flour. Beat the egg before adding to dry ingredients along with 1/2 tsp of vanilla extract. Placed in two round, ungreased, ramikins (sic?) and nuked for 1 min. 10 sec. Fun to watch them pop up.

Tasted great...not at all eggy (think beating the egg first helps with that). Color was golden and looked like something from my oven/pastry shop. Texture was moist and muffin-y.

I cut the muffin in half, spread cream cheese and 1/4 t of sugar-free blueberry jam on and bit into it. Awesome! Could only eat one though...felt good and full after the first one - you gotta love flax. (So, I too am wondering about storage options for the likelihood of my wanting to bake a batch for easy grabs on workday mornings.)

I'll probably work with adding nutmeg and/or cinnamon on the next batch as well as future adaptations to include blueberries, pumpkin, etc.

Mee too! No kidding! I made a whole muffin pan full before I had this (1min microwave idea). I tried it first drowned it in cream cheese, then ended up giving the rest to my dog.

I tried the one minute, added cinnamon, cocoa powder and more butter and I was still not impressed.

However !...I have not given up yet! I am definately going to try the 'Golden' flax AND add some of that Devinci's syrup like some have suggested. ...or vanilla. I don't think I am a fan of the 'whole brown flaxseed'.

I'll try and try some more till I get this right. ...

are you using flaxseed or flaxmeal? i think it has to be flaxmeal, unless you are grinding up your flaxseed in a food processor first. i think (but might be wrong!) that if you use the whole seed it wont 'work' correctly?

p.s. now i think i need to go out and buy some flax!

yup i gotcha - i'm just wondering bc she wrote 'whole brown flaxseed' that maybe it wasnt ground yet and that was the problem. in that case i could totally see why the recipe turned out gross

I just made a vegan version of the minute muffin - I am not a vegan but have a little project I am working on .. and I was pleasantly surprised to see that it not only works out ok (it was delish) but that I am getting a much lower calorie product - about 250 calories, 1.7 net carbs ..

It is still a little too wet and dense, but delicious. I'll post it when I get the wet ingredients better figured out ...

I know this is old but wanted to comment anyway -
Your taste changes when you get used to eating a low carb diet. I didn't these at the start, but my taste buds become more sensitive over time and now I love them. If you don't like a recipe in first month or two of LCing, try it again after 6 months before you make a final decision.

Sorry for the confusion. I did mean flaxmeal. I just meant the brown vs. the golden. I hear the golden is much better. Just gotta find it locally or order over the net.
