Substitute for Vital Wheat Gluten?

[COLOR="DarkOrchid"]I want to make my own almond flour bake mix found in the best burger bun thread, but it calls for vital wheat gluten and ever since low-carbing, I've developed an allergy to wheat. Anyone know what could be used as a substitute? Here is the recipe I would be following:

1 C Almond flour
1 C Vital Wheat Gluten
1 C Plain Whey Protein Powder
4 Pkts Splenda
2 T baking powder
1/2 t bakingn soda
1/2 t salt

Do you like the flavor of flax? Maybe that would work. You could double the almond flour. Any recipe that is expecting the development of gluten won't work, like breads, unless you omit any yeast called for, and rely on increased amounts of baking powder to make the bread rise.
