Easy, very low carb fudge brownies
Easy rich and fudgy brownies. These are the best I've had, and don't taste lc to me. Used the microwave 'cause I didn't want to heat up the oven. Used erythritol for minimal carbs and tummy issues. They wouldn't taste very good with splenda by itself because it doesn't play well with chocolate without sugar alcohols.
J's Molten Fudge Brownies
For 4 servings:
1/2 stick butter
1/4c flax meal (2g ecc)
1/4c zero carb whey protein powder (such as ISOPURE)
3T hershey's special dark cocoa powder (3g ecc)
1/4 square baker's unsweetened chocolate (1g ecc)
1/2 t vanilla extract
1/4c sugar free sugar alcohol based chocolate syrup (Monin, sorbee, etc.)
1 to 2 packets steviaplus (to taste)
1 egg (.3g ecc)
Melt butter and chocolate in a pyrex or other microwave safe dish (loaf shaped works well) and stir to combine. Add in the rest of the ingredients. Microwave loosely covered on high for 1 minute 30 seconds if you want the center to be like a molten lava cake. Cut off firm edges and microwave the part that is still gooey until it is just firm. It doesn't cook evenly in the microwave so you have to watch it carefully because you must not overcook this! That (and using butter) is the trick to achieving moist baked goods with whey protein. Refrigerate promptly to stop the cooking process.
The only artificial sweetener is in the syrup (a bit of sucralose).
About 6g effective carbs (fiber subtracted) for 4 servings, depending on how you count erythritol (I don't count it). Count two more grams ecc for 1/4c sorbitol-based chocolate syrup (like Sorbee brand).
