Low Carb Broccoli Bites help?
I really want to make these for a "grab and go" breakfast-or-snack-ball-thingie! Found them in an old "Quick Cooking" magazine. I'm just not sure which type of LC stuffing mix will work best. Maybe any of the LC stuffing recipes found on these threads? Just looking for a little input and help!
Here's the recipe as listed in mag.:
2 packages (10 ounces each) frozen chopped broccoli
2 cups crushed seasoned stuffing
1 cup grated Parmesan cheese
6 eggs, lightly beaten
1/2 cup butter or margarine, softened (I will use butter!)
1/2 teaspoon salt
1/4 teaspoon pepper
Cook broccoli according to package directions; drain and place in a bowl. Add the remaining ingredients: mix well. Shape into 1-in. balls. Place in a greased 15-in. x 10-in. x 1-in. baking pan. Bake at 350 degrees for 11-12 minutes or until golden brown. Or place in a single layer in a freezer container and freeze for up to 1 month. Yield: About 5 dozen.
To use frozen appetizers: Place in greased baking pan. Bake at 350 degrees for 16-18 minutes or until golden brown.
These sound so easy for a quick meal or snack on the go! Pretty low carb, too with a stuffing substitute, don't you think?

There was a thread here on the boards a couple of days ago for a pork rind stuffing. The other option would be to use a low carb bread, dried and made into crumbs if you are far enough on your WOL to do so.
