Best Tasting Dark Chocolate For Chocolate Chips?

It's been a very long while since I purchased semi-sweet chocolate chips and now find that I need some. Does anyone have a favorite sugar-free chocolate bar that could be "buzzed" into chips for baking?

We like Russell Stover's the best (dark). Hershey's makes some small, individually wrapped sugar-free bars sold in small packs that are pretty decent, too. The 4- ounce Russell Stover bars do not seem to be widely available. I have found them at Albertson's and CVS pharmacies.
