Luv these! Just made KevinPa's modified recipe with sf cinnamon dolce & caramel syrups. This is great for a crunchy snack also-taking some to the movies when I go again.

This is a recipe I converted about 4 years ago from an Amish cookbook and I will be combining it with your recipe...Thanks for posting your recipe.
And I will be most like changing the soy to carbquik or carbalose.


1 cup coconut flour(ground it myself with unsweetened coconut)
1/4 cup oat flour
1/8 cup soy isolate powder
1/4 plain whey protein powder
flax meal 1/8 cup(all combined for close to 2 cups total for flour)

1/8 cup olive oil
1/2 tsp. lite salt
2 oz. cream cheese
4 lg. eggs
sweetener of your preference equiv. to 1/2 cup of splenda
1/2 tsp. baking soda
1 tsp. vanilla

mix all ingredients and add water as you go to make a batter you can pour onto a greased cookie sheet. Bake at 350 until it is set and slightly brown. Remove from oven and use a spatula to take it loose from the pan in large pieces or strips. Use the spatula to chop into small pieces like grapenuts, turn oven down to 200-225, and dry for 1-1/2 hours. temp and drying time depends on your oven so watch it and turn it occasionally.

i would love to try this but all i have is almond flour and choc or vanilla protein powder and flax... do u think either of these will work?

I have never tried it but I would think with some experimenting you could get it to work.
