I threw this together last night and am at a Thankgiving get-together right now where I am the only Atkins follower. This peanut butter fudge recipe was a HUGE hit. Every person here had at least 3 pieces, and I had at least twice that much. So, I had to run in here and sign on to recommend it to you all. 76 total carbs for the entire recipe! I used the Smart Balance Omega Peanut Butter, so no trans fats!

The entire batch was completely gone in less than 30 minutes, and everyone was talking about it afterward ("Wish I could have one more piece - could you go make another batch, please?" LOL). I should have followed my instincts and doubled the recipe last night. :) My mom even requested it in lieu of a birthday cake for her birthday!

Mia831, whom I believe to the creator of the recipe, put together a real gem with this one. I wish I could thank her personally, but it appears she hasn't been on the board for close to 4 years.

The whole recipe took me a total of 10 minutes to throw together. It killed all of my cravings and afterward I was saying, "No thanks" to all the other low-carb goodies I brought along and I've not noshed on anything since. (I stay low-carb on Thanksgiving.) It's just so nice to come across something so new and wonderful, yet low-carb and extremely easy to make; so it was important for me to tell all of you about it. HAPPY THANKSGIVING, EVERYBODY!!!

Sheila, this sounds great. I will try it. One of my favorite quick desserts is your Super Simple Fudge from your website... I've added SF peanut butter to it before and it tastes like a Reese's cheesecake! Another variation I like is to add almond extract instead of vanilla... It tastes like Amaretto. Love your recipes. Thanks! :)

I made it today and it was good. I would suggest using unsalted butter though. (Erm, I didn't have any, so....)

Barbo, I did not make it with chocolate protein powder, but I am actually going to next time!! I used the Designer Whey Vanilla flavor as suggested, which I happen to love and use all the time anyway. When I brought up trying this recipe with Chocolate next time, everybody said, "No! This is perfect!" We all really discussed the recipe and did our best to critique the taste and texture - and I mentioned one of the reviews saying it was too salty; but since I used unsalted butter, I think there was a nice balance there.

So, for Christmas, I will add it to my repertoire again but make triple the the original recipe since the Thanksgiving batch was gone in a flash, and make an extra single batch using Chocolate-flavored Designer Whey just to test it out.

I tend to get really enthusiastic when I come across something new and great like this. :D

I made a batch yesterday morning before reading about using unsalted butter. Although the fudge is very nice and tastes great, it is much too salty with regular butter. I also thought about trying a batch with chocolate whey protein powder but decided to wait until I get some unsalted butter. I like the fudge best straight from the freezer but it does hold up quite well at room temperature if the room isn't too warm. It gets soft but doesn't seem to melt or turn to mush. Here's the photo that I took:

Sheila - great recipe! I made one similar before but it got much too soft unless eaten straight from the freezer. I still have some of Kevin's fudge left but when that's gone I will try this one.

This is the same one I've used for years. I love it too.

Since it freezes so well, I think I'll make one with vanilla and one with
chocolate just to see. Also why not make one with peanut butter chunky style.

Linda's pictures are wonderful.

Can we use coconut oil in this instead of butter?

I think that if you used coconut oil it wouldn't be stable at room temperature. Butter is pretty much solid at room temp and coconut oil is not unless it's very cool.

Just made a small test batch of this. It's too yummy! Made it with equal parts Splenda and Clabber Girl Sugar Replacer. Used chocolate whey protein powder 'cause I'm out of vanilla. Tastes just like real PB fudge! I won't be making this often because of how good it is. :o

Thanks for alerting us to the recipe, Sheila! I'll be bringing this to the Christmas table (and hoarding it during dessert, LOL).

Is the vanilla powder essential? I mean, could you use vanilla essence or something like that instead? Cos I'd love to try this but I don't have any of those powders - they're not available in England and I can't afford shipping costs. Would you think that it'd work without?
