Did a 1/2 batch with chocolate PP and it was OK... not bad but not good either. I even added a T of dutch cocoa powder.....it was OK... but not a deep chocolate taste I thought I would get.

Threw together another tweak for DH:

Peanut Butter Flaxococonut Fudge

1/2 stick butter (56 grams)
1/4 C virgin coconut oil (56 grams)
1/2 cup natural peanut butter (56 grams)(I use Smuckers)
1.5 ounces cream cheese (46 grams) (Philly regular)
2.5 T flaxmeal (16 grams)(Now brand)
3/4 C Splenda
2 scoops vanilla whey protein powder (52 grams)(Body Fortress)

I weighed out the ingredients when I made this.

Melt butter, coconut oil & pb in a bowl in the micro for a minute. Whisk together well. Whisk in the cream cheese and flaxmeal. Stir in the Splenda & protein powder. Spread into an 8x8 brownie pan. Fridge for about an hour then cut into pieces.

I cut my pieces bite sized so I got 36 pieces per batch.

Cals: 46
Fat: 4 grams
Carbs: <1 gram
fiber:>1 gram
NET carbs:> 1 gram ( I count a piece as 1 gram of carbs)
Protein: 2 grams

I think this is The ONE *I* will be making from now on. DEFINITELY a keeper... and SUPER dangerous! *drool*

I made this today so that I would have my own lil treat while everyone else is gorging on sweets at the picnic today. It is soooo yummy and ITA it is absolutely dangerous

Boud, that recipe looks interesting. I may try that today.

This PB 'fudge' is my fall back recipe, my go-to recipe when I'm in the mood for sweets and want a fat/protein food. I this stuff.

Gotta keep it in the freezer though. I don't like it at frig temp and def not at room temp.

When the DH is away I REALLY have to make only 1/2 of it because I find myself nipping into the freezer a lot more just to have a lil'piece. Then another. Then another. lol you get the picture!

I haven't made a batch since right before he deployed. I think I'll do that this weekend!

how much liquid splenda? I am going to use my chocolate flavored splenda or maybe vanilla since I dont know where to get liquid splenda unless I use stevia

Thanks for reviving this thread and thanks for posting this recipe, Sheila. Somehow I missed it last Thanksgiving. Man is this GOOD!!! I like the original recipe as is but may melt some dark chocolate and drizzle over the top for a variation if the mood strikes. So quick and easy and hitting the PMS spot!!!

Babsy, i'd use as much as equals the amt of Splenda called for. try one batch, see how it comes out.

I use splenda quick packs, cuts the carbs also (like liquid splenda does) and is easy to find, in Kool Aid sections of grocery stores usually. hth

This is so good, and so dangerous. Its the ultimate goody when frozen, I can't keep my "paws" out of it.
I also like to take some and crumble it up and put over cheesecake. I to only make this around the holidays, to tempting to eat it in one setting, which I have done, last year

Everyone , including me, says that "it's too tempting to eat quickly" but really it's an ok food. The worst part in it is the Splenda. I eat peanut butter all the time, I eat butter all the time, although granted not a stick at a time . I eat cream cheese almost daily. I use whey protein all the time. Together? It's like magic, all combining my favorite things I'm just saying....


I eat it as a meal sub at times when in a hurry. Or a snack at night at work.

ok, so i made this sat to take to a cookout. i doubled the recipe. i used liquid splenda instead of granular. after everthing was all mixed and in the pan i put it in the freezer as i made it a little late in the day for the cookout. so at the cookout i stuck it in the freezer till the eating was over and then brought it out for dessert. it was quite frozen so i let is thaw a bit before cutting. once i got it out of the pan, i started cutting it. as it sat it begar to liquify...by the time it was time to go home all the pieces i had cut had completely liquified on the plate. what happened?? i thought liquid splenda wouldn't affect the consistency....or at least that what others said in this thread??? but it seems this was the problem....don't you think? any thoughts?

What kind of liquid splenda did you use? Did you use the kind that is 1/4 t liquid splenda= 1cup regular splenda? Or did you use a simple syrup type where 1 cup liquid = 1 cup dry?

i used 1c granular = 1 c liquid i thought i read that it didn't aaffect the outcome which i didn't really get, but was just going by how others had turned out.

ETA: those that had said they used liquid didn't specify which concentration they were using, so i just used what i had.

Linda Sue has a conversion chart on her site and depending which type of liquid splenda you use equals 1 cup granular

When I made these I used the equivalent with FiberFit and they turned out YUMMY

This is a great recipe for sure- it is HARD to hold yourself to a piece or two- I pigged out on it yesterday before it had even set!

Again, be sure to use UNSALTED butter.

Carrie, I think the posters must have meant the super concentrated liquid Splenda or even the Fiberfit Diane used. That's why yours turned out so liquidy. I'll bet it was delicous soup anyway.

I made this yesterday using NOW vanilla whey, and using 1/2 liquid stevia and 1/2 xylitol for the sweetener. I missed the part about using wax paper, so it's kind of hard to get out of the pan, but I'll know better next time. It is delicious, I like it frozen; it's half gone already.:blush:

Ya know, I never use the wax paper. I put it in a square glad ware type container and freeze it. I cut it in pieces and lift right out. Ok with a bit of a struggle but that's ok LOL Frozen ONLY though. It's way too greasy to me unless it's frozen.

Oh and my sister said she's made it with 1/2 the granular splenda called for and it came out fine. Just a fyi.

I just got done making this for my boyfriend & myself. However, I'm not good in the kitchen and didn't have the cream cheese too soft. I decided to use a hand held whisk/mixer, laid it down, stirred up the mixture, reached in to the blade and was using my finger to scoop off the peanut butter concoction from the whisker. I hit the power button by accident! Yikes, it sliced my index finger open! I hollered like I was dying! Thank goodness my boyfriend is (a) calm and (b) a safety coordinator and knows basic first aid! I did not look at the slice, but once my bandage was on, I did finish the fudge. Its in the freezer right now, and thank heavens no blood got in it! That was maybe the 5th time I've used that gadget but I knew I'd probably end up doing it again and threw it in the trash.
