Salmon Loaf

Preheat oven to 350.

2 (15oz) cans of salmon
2 eggs
1/3 cup parmesan cheese (green can)
2 T minced dried onion
dash cream

In a mixing bowl blend salmon, parmesan, onion and eggs, add cream and mix well. Place in a buttered loaf pan.
Bake for 50-55 minutes.

ReneeD70 - I made this today and it was really very good. My mom used to make something like this when I was little and I've been looking everywhere for a low carb verion of this recipe (she called it salmon puff). The only tweak I made was I made a 1/2 batch (only had 1 can of salmon), used shredded parm (that's all I had) and whizzed everything up in my food processor before baking. Baked for 30 mins. MMM! Thanks!

cream sauce with peas is how I always remember having this dish. I was too lazy to make the cream sauce, but will next time!

I found some really great canned Alaskan wild salmon (just salmon and salt) and couldn't figure out what to do with it. I remembered the salmon puff my mom used to make and found the recipe Renee posted above. It's really great, a little more dense than the version I had when I was younger but it's not full of junk fillers and is really quite good. It would make a fantastic lunch! IMO I think the quality of canned salmon really determines how good this dish will turn out though.

My grandmother who passed away at 93 (30 years ago!, I was 16), always said that red salmon was great and pink salmon was cat food!

She also said that small salad shrimp was "bait"!

And if I wore my bikini, she would claim I wasn't wearing enough to clean a shotgun with! (wish I had that body back!)

Ah, memories. She was a crotchedy old woman in her last years. Very Scottish, boiled everything!
