Welcome back Corned Beef Hash!

I just made the easy corned beef hash on Linda Sue's site for the second time. Linda made a suggestion that this would taste good with a fried egg on top and boy does it ever!? Corned beef "hash" topped with a fried egg. My favorite low carb breakfast. And lunch? :blush:

We love CBH too! I cook 2 corned beef briskets for 10 hours in my big oval crockpot, with the spice packet that comes with it and a LC beer poured over all. I rearrange the meats a time or two to make sure all parts of it get exposed to the liquid.

Then I cool, cube up in big chunks, run through the shredding blade on my processor, bag in 1 cup portions and freeze. Now we have "almost instantly ready CBH" for any weekend!

When I get ready to cook it, I take the CB out of the freezer and let rest on the counter while I chop up the veggies. No need to totally defrost it, it breaks up and cooks very quickly.

I heat up a couple tablespoons of bacon fat or organic lard in a large skillet, put some diced onion in to soften, and chop up either a small sweet potato or some radishes into dice. Add those to the onion and stir occasionally, I cook them til they are just browning.

Now I put in the CB, break up a bit with a spatula, add a dash of onion powder and a dash of Worcestershire sauce (not much, just a tiny bit works here) and fry it up til the CB is browning just a bit.

Make your egg for the top and you're good to go!

Thanks for bringing this recipe forth.

Gosh what an easy meal. I buy a good deli-corned beef that I can
have sliced to any thickness. It's loaded with garlic and it's made by Charlie's Pride. Great beef, so I shall use that.

Char, your recipe and ideas for bagging for even easier and quicker
meals is an excellent one.

Great and easy recipe, thanks Paula, we just hardly have any tweaking
t0o do.

Quick & Easy (Bachelor Style ;-)

1/2 can Corned Beef Hash (Western Family, 20 net carbs)
2 eggs (Jumbo, 3 carbs)

I break the corned beef hash up with a fork in a 4.2 cup Good Cook plastic bowl, shove to the center from 2 opposite corners (to make room for each egg) and zap in the microwave for ~3 minutes (until eggs are set)...yummy! Be sure to puncture the yolks to avoid an explosion...I lay the top on the bowl while cooking...just in case... ;-)
