Meatballs with Flax Meal?

I am interested in adding flax meal to diet. Has anyone used flax meal instead of bread crumbs in meatballs? Please share your recipes.

I actually experimented with this last weekend. I thought of Flax meal at the last minute. Here is what I made and my DH loved them. I made plenty thinking I would have them for the entire week, and the lasted one day!!!


I used 2lbs of fresh pork....Now you could use sausage, but I had ground pork I needed to use!

Added 1 pkg grated cheddar cheese
2 eggs
1/2 cup parmesan cheese
1/2 cup flax meal
Seasonings....garlic, onion powders, season salt, sage, italian seasonings.

Rolled in balls and baked. They were really good. You wouldn't have to add any seasoning if using sausage seasoning. I poored the grease off every once in a while during baking. They were GREAT!! I think you could substitute any kind of ground meat. Turkey or beef even.

Great! Thanks for the reply. I was wondering if the flax meal would be enough to keep them from falling apart. I plan to give it a try tomorrow.

I think it was an 8 or 12 oz package. Really though I just mixed it all up in a bowl and added more if it looked like it needed it. It was whatever size Kraft comes in. You can do all kinds of stuff with this recipe. The grated parmesan acts like a breading also. I roll my chicken in it and fry it also. We could probable make a breading for chicken mixing the flax and parmesan and some seasoning. Roll it in egg first. I may try that too.

Hmmm, maybe I'll try the flax meal in my meatloaf. I usually use 1/3 cup of steel cut oatmeal but I'll have to try the flax meal.

Hey, try the one minute muffin!
