Oh yeah! If you like the muffins there is a way to take the similar recipe into a awesome Pizza crust. I just made it last night, one for me one for hubby (particular about his pizza, and he liked it!)

The crust:
1/4 c flaxmeal
1/4 tsp baking powder
1/4 tsp garlic salt
1/4 tsp onion salt
1 packet Splenda
1 tbs Italian seasoning
1 tbs grated parmesan
1 egg
2 tsp water

Mix dry ingredients, then add egg and water. Spray a dinner plate with Pam and spread mixture into plate. (Will be about the size of a 'personal pizza') Microwave for about 1 minute 40 seconds.
Slide off plate into a pam sprayed frying pan and brown both sides on high.
Place crust on a cookie sheet lined with parchment paper. Spread pizza sauce over crust almost to edges. Top with cheese of your choice (I used a moz./jack blend) and toppings of your choice. Pepperoni and mushroom for me. Heat in oven at about 350 until cheese melts and toppings reach desired 'doneness'. Cut into 4ths and enjoy. It looks like pizza, tastes like pizza, you can pick it up and eat it like pizza, has that crunch like a thin crust pizza.

I microwave mine for only 45 seconds...the texture is very "bran muffin" like...this muffin has really made a difference in my diet...I'm regular now because of the flax and/or coconut oil...and my weight loss seems to have jumpstarted after a 2 -3 week stall...I also gave up caffeine 8 days ago...that might have helped too... but I feel ggrrrrreeeeaaatttt!

Thanks for posting this! I usually make the flaxseed muffins but this is much faster and it tastes great! I made it as posted on the first page except since I ran out of butter I used canola oil. love it!

Oh goodness, I have had my flax meal in my cupboard (unrefrigerated) for I don't know how long

I did take a good look a the meal when I poured it and here were not any of those extra protein goodies crawling around in it. It is not rancid or I would have noticed the "turn". Guess I am a lucky one.

Looks and tastes ok to me.

OK I also tried frying it in a pan AFTER nuking it instead of toasting it.

I still wasnt thrilled with the texture. ill just keep experimenting.

I like the texture so much better than nuking them. Plus, I am able to slice it in half and either toast them up, or just use them as a sandwich.

Thanks for posting about using flax meal for muffins - I had forgotten all about it.

BTW, I keep mine in a zip lock bag in the freezer so it stays fresh for ages and ages.

As a variation on the muffins, I just made flax pancakes today. I topped with more butter and whipped cream flavored with vanilla. I'm definitely getting my fat in! They were interesting, and pretty good!

(My recipes come from the Atkins discussion board.)
Flaxseed Pancakes

Serving Size: 1

3/4 cup flax meal
1/4 teaspoon baking soda
1/4 teaspoon baking powder
1/4 teaspoon salt
3 packets Splenda packet
1 egg
1/4 cup heavy cream
1/3 cup water
1/2 teaspoon vanilla
Mix dry ingredients together and mix well.
Add cream, water, egg, and vanilla.

Mix well.

Spoon on greased hot griddle.

Cook on low temperature until almost cooked all the way on one side, then flip to brown the other side. Takes longer to cook than regular pancakes and will burn if the heat is too high.

Try adding blueberries?

Notes: For entire recipe, 27.5 total carbs, 22.8 fiber for 4.7 net carbs for entire recipe.

Can add more water if batter is too thick.

Get about 6 pancakes.

When doubling, 3 splenda packets is fine.

These can be baked in the oven (325 or 350 for about 20 minutes) rather than on top of the stove.

WOW! After reading the rave reviews this morning, I ran out to Trader Joe's to buy some flaxseed meal. I was very skeptical and even made my husband try it first.

He didn't love it (but then again he hasn't gone 11 days with barely any carbs) but I did! If I can eat these I think I have a shot this time around.

After reading this thread I had to go buy the flax to make muffins. Wow - it was fantastic. Quite filling and I love all the butter I can put on it. I will experiment with the different ways to fix this delicious treat.

I add a tbl of cocoa powder (I love Wonderslim Wondercocoa-only 1 carb per tbl) and some sf chocolate macadamia nut syrup (you can sweeten with whatever you like-just seems to help the chocolate taste)-just before I nuke it I float a square of Lindt 85% Dark Chocolate in the center. When you slice into it after turning it out it flows just like a molten chocolate cake. I also use CarbSafe Dark Chocolate and CarolynF has tried it with the Dove SF Chocolates. I have it with a schmear of cream cheese (don't even sweeten this)-the tang seems to go great with the dark intense chocolate. The Lindt 85% is great for lc-1.25 carbs for 1 sqaure. Yummy! Enjoy-I think he will like this if he's a chocoholic like me! This has satisfied my chocolate itch and the flax is so healthy too-don't feel guilty eating this!

Ok, all the rave about the muffins - I went up to the health food store and bought a lb. of og. flax meal. They grind it there fresh every week. I just made the muffin and it's good! It does have sort of a funny type of texture..someone mentioned a bran muffin and I would agree. I do like them and am excited to experiment as well! My hubby even likes them - so the recipe will stay on the counter so we can pop them in anytime I told my husband that I felt guilty eating it - he said I sound like a commercial LOL

Ok, how do I enter these in ******? I put in the egg, sweetener & butter but how about the flax meal? It only has flax seeds There's no nutrition label on the bag since it's fresh ground from the store. help?

My daughter made a savoury one using chilli and onion flakes. Have to try that too. I use almond flour sometimes, or half and half with the flax.

You have to enter it as a custom food. I tallied up the totals for everything in the muffin and entered that as a custom food.
