Freeze?

My Urologist wants me taking Flaxmeal.. 2 to 4 TBS a day with prune juice. OMG I hate prune juice and actually feel just the flaxmeal alone helps. I've been making the 1 minute muffins and was wondering if I make more at one time, do they freeze well or how long will they be ok in the refrigerator?
Opinions please?

I make up a batch of OMM mixture, put it in an airtight container and store it in the refrigerator. When I want a muffin I just combine 35g of the mixture with 1T each of oil and Da Vinci and an egg. Takes a few seconds.

My mom has kept them in the fridge for a few days. Neither of us has ever frozen them, I'm sure it would work.

Thank you. I'm going to freeze one and see if it's still ok when I thaw it. I doubt it will make a difference.

There was a post a couple of pages back by someone who baked a muffin pan's worth of OMMs in the oven, then froze what wasn't needed immediately, so it must be ok. I usually make them one at a time, though, so can't tell you first-hand how they freeze.

I make 4 at a time cut in half, as I eat 1/2 a muffin with breakfast and freeze them, I have done that for quite a few years and they come out fine.................... Ann

I ran across a OMM from a blog several months ago that called for coconut flour and water along with the usual ingredients. I can't seem to find it. It was a man from a different nationality. Can anyone help? I don't recall that flax was an ingredient.
