Flax Meal Crackers

I've made Linda's recipe for this with 2 changes. I substituted almond meal for the sesame seed, cut back on the seasoned salt and added a little onion powder. They turned out great!!!

Now I need some hints on making them more convenient to make. It took me longer to make them than to eat them!! I cut parchament to fit the turn table of the microwave and used the corners for the spreading out of the dough. The dough was easy to form into 8 little balls and I placed them on the outer edge of the turn table. I used the parchament corners and the back of a teaspoon to smooth them out. Then and went around each cracker edge with the spoon to get rid of the jagged edges. I microwaved them for 1 minute. Took them out and allowed them to cool. I then turned them over and microwaved for 30 seconds and they turn out nice and crispy. See what I mean? What do you all do with these?

Is this the recipe you made? I see that I used regular flax meal to make mine instead of golden. What kind did you use? Golden flax meal is the only kind I buy now and I bet mine would have come out better with that kind.

MICROWAVE FLAX CRACKERS
2 tablespoons flax meal
1 tablespoon sesame seeds
1/2 teaspoon Seasoning Salt
1 tablespoon parmesan cheese
1 tablespoon water

Mix all ingredients in a small bowl until dough forms. On a piece of parchment paper, shape dough into 6-8 thin circles. Place parchment in microwave and cook on HIGH about 1 minute, checking after about 40 seconds so they don't burn.

Makes 1 serving

Per Serving: 137 Calories; 11g Fat; 7g Protein; 7g Carbohydrate; 5g Dietary Fiber; 2g Net Carbs

Thank you for the recipe LindaSue. I have your site bookmakred so Im sure I would have found it eventually. But since I tried the flaxmuffins for the 1st time (Crazy...seeing as Ive seen them mentioned everywhere her for years) and loved them I have been looking for more ideas to use Flax meal.

Yes LindaSue, That is the recipe I used. I have made it with both golden and regular flax seed meal. I don't mind the regular but the golden is especially good. I wonder if the use of almond meal made it easier to shape? This is a wonderful recipe! It is worth making.

I thought that I had lost this excellent little "Flacker" recipe....

I hope to share it with my DIL and Grand-daughter this week end.
Their family has recently gone GF and my DIL is low carb.
This will make an excellent "take on the plane" for her.
I use a little cookie scoop (works like an ice cream scoop) and flatten them with a tortilla maker--- sandwiched in parchment paper.
Then microwave each cracker for 30 secs.
It makes 5 perfectly round gourmet like crackers...

I sub in onion and garlic pwd...and a little salt.
Spread on a little cream cheese.....

...Linda...you are the best
(Yes, I use only the Golden Flax)
