Chia Recipes

You got em? Please post em! (I tried to find some on the net and the options were sparse.) If you experiment, please post your failures as well. We can all learn from each other's mistakes.

Chia seeds

Strawberry Chia Jelly
Take frozen strawberries, slice them and let them thaw. Sprinkle chia seeds over the top and mix. In an airtight container, let them sit for a day in the refrigerator. Check the mix, and if it still a little watery, add some more chia.

One the consistency is to your liking, sweeten with a small amount of liquid stevia or other sweetener of choice.

Chiannaise
Mix 1 TBSP chia seeds with 1 pint of heavy cream, 3 TBSP olive oil, and 3 TBSP vinegar. Add some garlic and other spices to taste, and a touch of splenda, liquid stevia (about 2 drops) or other sweetener of choice. Place in an airtight container shake for a minute. You end up with this really creamy dressing that tastes like a ranch dressing/mayo/miracle whip mutation.

Meat Tenderizer
When cooking with lean ground meat like turkey, you can add 1 tsp of chia seeds to the meat as you brown it to keep it very moist and juicy. It keeps the meat from getting tough, does not change the flavor and improves the texture while adding fiber and nutrients.

Wifezillia- Have you used the seeds? I see you are in the Springs, I'm in Parker. I looked at Vit. Cottage and they carry it in their bulk food section but were out. Will have a shipment in Tue. I want just a small amount to play with. The clerk said they are slimmy when wet, like gums, is that true? I too am looking forward to recipes to play with.

Hi Midnight! I ordered mine over the internet. Just got 2 lbs today, but nice to know there is a local source. They do turn to a gel (but it isn't slimy or gross) when wet, and have a very very mild taste. Other than the recipes I listed, some people have used them as a replacement for flax, a replacement for eggs, or as an addition to smoothies. The three recipes above are ones I actually tested myself. I am just trying to get recipes listed in one spot so they are easy to find

I had a smoothie tonight. I used 1 scoop whey powder, 1 c strawberries, a Dannon Light and Fit and 1 T chia seeds. I mixed it up, kinda chunky, and ate it with a spoon. Yum!
I put one T in my Fiber cereal in the morning with protein powder, water, 1/2 banana, or 1/4 c pineapple, or 1/8 c pineapple and 1 apricot.
I also made bars and chocolate chips cookies. My DH is using the gel in his oatmeal. He is Diabetic and it seems to have done wonderful things to his glucose readings. I plan to make brownies, soon as what I have are gone, and use some in them. I think the coconut/chocolate/chia seed combo is wonderful.
All this and more Omege 3 than Flax!!

Found this, but haven't tried it yet...

Super Garlic Dressing

Ingredients:
1 T Good Cause Wellness Chia Seeds
3 T water
2 cloves garlic
1 T mustard powder
2 T raw apple cider vinegar
2 T extra virgin olive oil
1 t sea salt

Directions:
Let the chia seeds sit in the water for a few minutes until they
become gelled. Grate the garlic with a very fine grater such as the
Microplane. Add the garlic into the chia gel. Add the mustard
powder, vinegar, oil and salt. Whisk until well combined. If it is
thicker than you'd like, add a little more water. This is also good
with lemon juice in place of the vinegar. Serve over any type of
salad.

Polka Dot Pudding

1/2 cup heavy cream
1/2 cup water
1 tsp vanilla extract
1 TBSP Da Vinchi's syrup (Vanilla)
2 TBSP Chia

Mix ingredients and let set over night. If pudding is not thick enough, add some extra chia and let it set for another hour or so.

I found the base of this recipe on the web. However I tweaked!!

Bette's Chocolate Chia Coconut Bar
1/2 c coconut oil
1/3 c cocoa
1/2 c xylitol
1/3 c coconut water (can use coconut milk/cream or yogurt)
28 g chia seeds (little more than 2 T)
1 1/2 c unsweetened coconut (I used the NOW brand med coconut)
1/4 c almond meal
1/2 t vanilla extract
dash of salt
1/4 c coconut flour
30 g vanilla whey powder

First 4 ingredients---cook some in micro to dissolve xylitol. It was actually kind of like a chocolate syrup when I took it out.
Add rest of ingredients and mix well. Put in end of a jelly roll pan (11" X 15") on plastic wrap. Smooth out to make an 11" X 6" bar and refrigerate till solid.
Cut into 12 bars, approximately 3" X 1 3/4". Wrap individually, and refrigerate.
These are really good.......I could have kept eating them. And you get lots of coconut and chia, and I added protein, so should all be good for us. And they were plenty sweet.

For the ingredients I used, 12 bars, each: 190 calories, 1.14g protein, 7.47g carbs, 5.18g fiber, net 2.29 carbs

Either way. If you grind them, they will have less of a "frog's eggs" appearance when mixed with liquid.

I added about 1/4 cup chia gel to my protein shake this morning. Amazing. Now I am thinking I can leave out the thicken thin gum - the chia gel makes the shake very thick and rich. Very filling and it doesn't add any flavor. It does add an ever so slight amount of grittiness - but nothing that bothered me, in fact I liked it.

I think I'll have a protein chia shake every morning and watch it hold me for several hours...

In fact, I think I could develop a Chia diet.

Hi wifezilla (love that name! LOL)

What other ways are you using the gel and seeds?

Also, because of your reviews, I tried the Artisana coconut butter - wow! delicious flavor..when I first opened the jar, I couldn't stop taking spoonfuls (I think because I hadn't eaten anything sweet in so long), but amazingly now I am satisfied with one at a time..so rich and flavorful

Hi- I made this today and it was great on vegetables.

Chia butter
Use equal parts chia gel and butter.
Place chia gel in a blender and blend until smooth. Add softened butter and blend until smooth. Place in airtight container and use as you would normal butter.

I am so glad you liked the Artisana Coconut Butter Rosie. I did the same thing when I first got mine! LOL

Ceze, the Chia Butter idea sounds cool.

I haven't tried any new recipes lately...at least ones that worked. I have been sprinkling it on my salads and adding it to smoothies. I also add it to yogurt. (I have been experimenting with yogurt though. Drained yogurt vs. Greek yogurt. I liked the drained better.)

I did try adding chia to my coconut bark recipe. It was kind of tasty, but there was something just not right about it.

I've been mixing the Chia gel with the Fage Yogurt....80 calories, 6 carbs, O fat, 13 protein.

When the gel and yogurt are mixed together, you get an amazing amount of food volume for sooo few calories.

Of course, I do sprinkle a very few dehydrated berries and crushed pecans on top of the yogurt to moderate the blandness.

All in all, I think it's a food bargain.

Like the gel, butter combination. Think I will try that next.

Bette, I jus made your chocolate chia coconut bars. I made them extra sweet, and used only coconut flour (no almond flour). They are absolutely delicious. I'm crazy about them. Had to stash them in the freezer for a semblance of portion control They taste like a great chocolate coconutty candy.Thank you.

I made some chia seed pudding that I wasn't that crazy about-but then I put in half a recipe of the chia seed pudding with 1 1/2 cups of chocolate calorie countdown with a little sweetzfree all mixed together and threw it in my cuisinart ice cream freezer--I ate the whole 2 cups worth(oops) with some of that smuckers sf chocolate topping. I wanted to make another version tonight but my ice cream cylinder isn't completely frozen, and I know from experience, not to even attempt another batch until that sucker is frozen.

Here's the chia seed pudding recipe--
Chocolate Chia Pudding

1/2 cup Chocolate Hood Calorie Countdown Dairy Beverage
1/2 cup sugar-free Chocolate Da Vinci syrup
2 drops sweetzfree
1/4 cup ground or whole chia seeds

In a small bowl, whisk ingredients together in order given. Let sit 10 minutes; stir. Chill for at least 20 minutes. Stir and eat.

This makes 1 serving with about 5 net carbs

I haven't tried chia seeds in ice cream yet. Glucomannan powder did not work out for me. I presume from your recipe that you need the pudding to be thickened before you put it in the ice cream freezer. Did you grind the seeds?

Thanks for the recipe jerikay. My ice cream maker is MIA at the moment, but I might make some pudding and add the chia.

I haven't had any stomach distress. It does make you more regular though. I think if you haven't been using the chia, you might want to start out with small amounts until you get used to it.

And whatever you do, if you spill some seeds on the counter, don't clean it up with a wet cloth--it becomes very slimy..........hahhahaha!! Just clean it up with a dry cloth.

Soobee-Yes, the pudding had already thickened and I had used ground chia seeds.

Cats for Texas-I have seen Chia Seeds at GNC and Vitamin Shoppe.
