I am finding that the pudding likes to separate a little. I have seen where people of suggested stirring it a few times during the first 2 hours of making. I can see doing that on my next batch. It is to evenly distribute the chia seeds instead of them forming a layer.

I bought chia seeds today, but have no almond milk. Any ideas on making pudding another way? Although I could just wait until the weekend and get almond milk. If I HAVE to be patient. Harrumph.

Do you have canned coconut milk? This works as well.

I used to use chia seeds in HWC and flavor with a sprinkle or two of a sugar free drink powder (kool aid, crystal lite, etc.). Within just a few seconds of stirring the seeds in, it would thicken quite nicely, both from the seeds and the cream. For a small snack I would use about 1 T of seeds and 1/4 cup of cream, I think - maybe a 1/2 c cream.

pulled mine off the shelf can't remember why I originally bought them. Just stirred some seeds into my homemade yogurt which is always kind of thin. Now I shouldn't have to drain off all that whey to get thick greek style yo.
