Peanut butter balls????

Hey everyone my mom use to make this recipe that included peanut butter, coconut, and maybe vanill. They were wicked good. I can't seem to fid the recipe anywheres and for that matter don't even know if they would be high carb. If anyone has heard of a recipe like that please share it with me Also if u think this would be high carbs or even have a better way of making it plz share

A friend of mine sent me this a while back... Not sure if its similar... doesn't have the coconut in it, but that would taste great in these!!!

Chocolate Peanut Truffles

3/4 cup creamy peanut butter
1/4 cup butter
1 tsp vanilla extract
1/3 cup sf hot chocolate mix
1 1/4 c splenda
1 cup finely chopped peanuts

Line baking sheet with wax paper. BEAT p-nut butter, butter and vanilla until creamy. Combine cocoa mix and splenda into another bowl and then stir into p-nut mixture. PLACE crushed peanuts into dish and roll "1" balls of the p-nut butter mixture through it. PLACE on wax-lined baking sheet and refrigerate until firm.

24 + truffles
1-2 carbs per piece

how about rolling them in toasted coconut before refrigerating them? sounds delish, i am going to try these tomorrow. thanks for the recipe.

If you google "peanut butter balls coconut" it comes up with several recipes. Not LC of course but they look pretty easy to convert. Maybe you can take a look at those and see if any of them look like your Mom's recipe then post it here for ideas on how to convert.

I tried these today and they disappeared. I told my DW I thought it was magic.

1 T. crunchy peanut butter
1 T. special dark dutched processed cocoa
1 T. unblanched almond flour
1 T. unsweetened coconut
1 T. ricotta cheese
sweeten to taste(i used a couple drops of sweetzfree)

Mix, roll, and refrigerate until firm.

10 truffles
1/2 carbs per piece
