Chia seeds

I just bought some chia seeds and made some chia gel with them yesterday (soak 1/4 cup seeds in 2 cups water for an hour or two) which I then mixed into plain yogurt. It added nutrients and fiber, no carbs, and had a neutral taste just like the web site said it would. It also did make me feel full a long time.

Is anyone out there using chia seeds? I found another thread that only had three posts in it about eating cocochia bars, but it really seems that chia seeds should be a low-carb staple. They are similar in some respects to flax, but have a more neutral taste and an interesting history that points to satisfying hunger and relieving fatigue.

Flax will remain a part of my diet, but I can already see that chia will help me a lot too. I will probably buy the book that has chia recipes and other info in it, but would also like to hear from you all. Let's exeriment!

Just found this article....

"High in Protein Chia seed is a complete source of dietary protein, providing all the essential amino acids. Compared to other seeds and grains, chia seed provides the highest source of protein, between 19 to 23 percent protein by weight."

Sounds like it would make an excellent thickener too. Humm...I think the local hippy health food store carries these.

Well hmmm... I was kinda hoping someone would have experience eating these things. Chia pets seem sacreligious now in light of the high esteem native people held the chia seeds in. Then again, it could be overblown too. That's what I really wanted to know--are chia seeds really all that, and worth five bucks a pound and making weird recipes with.

That is why I am going to check the local hippy-infested health food store. Most of their stuff is in bulk and I think I saw chia seeds near the sprouting section. (I go there because they are the only place that carries unsweetened coconut flakes...only $1.65/lb!)

If they do have it in bulk, I can just get a tiny bag and experiment.

I googled chia and found some interesting reading material. I might give this a try. I like how you can use the gel to replace fats in cooking and baking. Just the general bulking would help a person feel fuller. And once you make the gel it keeps well in the fridge for over a week, thought they said 2 wks.

I've never heard of this before....Besides Chia Pets, of course. Actually I though "Chia" was just a name the Chia Pet company made up. I thought it was grass seed they used. Very interesting....Being someone that is often hungry no matter what I eat, I'm interested in something that could expand in my stomach.....I'm going to try to find some of this....

My co-workers already think I'm nuts for eating coconut oil (I have the big jar of Nutiva on my desk).....Wait 'til they hear I'm eating Chia Pets..... :-)

I used the gel today in yogurt and salad dressing, and I give a big thumbs up on both. Now, do keep in mind that it looks like a blob of miniature frog eggs when you make the gel, but once you mix it in things, it isn't blobby at all, just makes a nice smooth consistency. My 5-year-old thought it was fun to have in her yogurt, which really surprised me. It really made me feel fuller and I liked knowing that I was getting good nutrition.

I mixed about 60% dressing to 40% gel, and did the same with yogurt too. It did not seem to water down the taste, just made it slightly mellower.

The texture was very much like it would have been without the chia gel, except the seeds do not completely melt in, so you can feel the seeds on your tongue once in a while. It was fine for me since I normally put seeds (like flax or sunflower) in my salads and yogurt anyway. On one web site they said that the seeds are supposed to totally melt into the gel, so I am going to try upping the water to seeds ratio and see if that happens next time.

I've lost 4 pounds in 4 days on ******* with coconut oil and chia gel, so my experimenting has not stalled me.

They did have the Chia seeds at my local hippy-infested "health" food store. (If it is a "health" food store, why do the people there all look so sickly and pissed off??!?!)

Anyway... $22 a POUND! Yikes! I did buy a small bag and tasted some. They kind of reminded me a bit of poppy seeds because of their size. Flavor was mild but good. They do turn to a gel of sorts, but it isn't an icky slime (like ocra - GAG!). It is kind of like an oatmeal texture but without all the starch.

I added some to some salad dressing and it thickened it up nicely without messing with the flavor. I will try a few more things, but, if I want to keep using them, will need to find a better source.

I think our hippies around here must look a lot better than yours out there. When I clerked at our local co-op, I was pretty impressed by how healthy many of the older people were, and they were so darn sweet that I really missed them when I had to quit (to make more money--coops are worse to work for than Wal Mart). I really took note that the healthiest people bought the most apples. Dunno why. I do remember some rather sallow-looking and noodly vegans, but they were pretty nice too.

I have had some chia seeds sitting in yogurt for two days now, and the texture has now changed to that of tapioca, with distinct little round squishy things instead of just a gel. I still like it though. I forgot to stir some in my soup at dinner. Darn. Have to try again tomorrow.

CHia seeds

I use them. I soak them and then mix them in my low carb jelly and the kids jam to stretch it out. They never even noticed the difference! Especiialy in the raspberry

I alos have mixed them with mayo in my coleslaw etc. No one said a word. I don't know if they thought they were pepper or poppy seeds!

My health food store sells them and I like them.

In French? Yikes. The Chia plant is native to South America. We call it Chia in the US because that is what the South American's call it...no special English word or translation. Not even sure they would have a French word for it at all. Have you tried looking up the Latin/botanical name?

The binomial name (genus and species) is Salvia hispanica so you might search for that. I don't believe there would be a French translation for this or for Chia.

Surprisingly, they're actually listed on the USDA site and also in MasterCook. MasterCook has bad info though. They forgot to list the fiber. Here's the breakdown from the USDA:

1 ounce Chia seeds (28.35 grams): 139 Calories; 8.72g Fat; 4.43g Protein; 12.43g Carbohydrate; 10.7g Dietary Fiber; 1.73g Net Carbs

I made strawberry chia jelly the other day.

I took some frozen strawberries, sliced them and let them thaw. Then I sprinkled chia seeds over the top and mixed. I let them sit for a day and checked it...it was still a little watery, so I added some more chia.

The next day I checked it again and it was nice and thick. I then added a little splenda to sweeten. It is so yummy
