Tell my Kevin, how are you dissolving the sweeteners? I am finding the Erythritol to not dissolve in the oil. What the heck am I doing wrong?

I sift the erythritol and cocoa together then nuke the coconut oil to a hot liquid the wisk the erythritol and cocoa mixture into the oil. I have not had a problem with it disolving that way.

you might want to try 1/2 Davincis and 1/2 a powdered sweetner like Stevia?

Im still experimenting too..

We sift our erythitol into the melted co and cocoa. We dont have any probs that way. I also add unsweetened coconut and raspberry loranns to mine and that combo is great.

I will need to make some more tomorrow. Will try the suggestions.
I got my Cacao nibs, so will do one batch with that, then another with sesame seeds. The oils in the sesame seeds should be good, the fiber in the Cacao Nibs as well. I could probably use a flavoring too...will have to see how I feel about it tomorrow afternoon. I made a Dbl batch on Monday, stretched it out 4 days, now due to make more.

I just finished making a batch of Kevinpa's version of the bark, and I also made a cream cheese mixture (I think posted earlier or on the CO sticky) with just cream cheese, CO & vanilla Davinci's. Both are setting up in the fridge. But I got to wondering...would the erythritol mix well with the cream cheese and CO mixture, and if so, would it set up like a cream cheese/vanilla type fudge?

I've been making this alot lately,and add orange oil. It is really good. I tried using Davinci's syrup once, but it didn't work, because it's water based instead of oil based, it separated in the freezer and was really gross.

I ran with this idea and this was the results:

1/2 cup coconut oil
4 oz cream cheese
1/4 cup granular erythritol (ground into powder for a volume of almost 1/2 cup)
1 splenda quick pack
1 teaspoon vanilla
1/4 teaspoon orange cream flavor oil

Put the coconut oil and cream cheese in a glass mixing bowl and microwave the two until the coconut oil is almost completely melted. (approx 30 to 40 sec.on high)
Removed the bowl and wisk the two together for about 1 min....noting that the oil and cream cheese are separated.
Return the bowl to the microwave and nuke for an additional 30 to 40 sec on high then remove it and wisk in the powdered erythritol until the mixture is smooth and creamy with no separation.
Then wisk in the splenda quick pack, vanilla, and flavor oil until well combined.

Spoon into mini muffin(tart) pan and put in freezer to set.

These are excellent!!

they taste great...but one question how did you get them to come out...

I made mine half with raspberry(1/8 tsp) in half the batter and half with the cherry oil.

Nothing seems to stick to these tins. I just ran a thin knife around the edge and they popped right out.

I've been switching it up. Some days I make it with the peanut butter, some days with unsweetened coconut... same amount. I find that having a different taste/texture keeps me from getting sick of it.

Morning everyone* I've been melting my 2 T of co in my coffee for the last 2 months. BLAH! SOOOO glad to have finally made the bark! MMM* I just pop it in my silicone cupcake thingies..perfect! I did find granular splenda works best for a sweetener for me, tho, davinci's does separate when ya freeze it. The only "trouble" I have with co is, after spreading my 3 T out during the day, I'm really not hungry and am lucky if I get 700 food calories in. Do those of you who eat even more co have a trick to being hungry? Have a wonderful day all*

I have been eating it with the coconut and almonds. Today I think I am going to make it with Peanuts and make a "Mr. Goodbar"!

I also am going to use different extracts and try to make different flavors so I don't get tired of it.

I tried it! I added a scant 1/8 tsp of peppermint and I poured it in a ziploc sandwich bag and laid it flat on a plate. I really like it.

I just made Kevin's "white" version with the cream cheese. I didn't have orange oil, so I used coconut flavor and added in unsweetened coconut flakes and pecans. This is my favorite version of the moment. Tastes likereal candy to me. I may drizzle chocolate over this the next time. Major yummy.

I got a package of orange, lemon and lime oils at World Market. If you can find a shop that caters to candy making, you'll find some there. I think I've seen a few at Michaels in their candy area.

My newest twist

1/2 cup coconut oil
1/2 cup dehydrated strawberries
1/4 cup granular erythritol (ground into powder for a volume of almost 1/2 cup)
12 drops sweetzfree (1/2 cup equivilent)
1/4 teaspoon strawberry flavor oil

Put the coconut oil in a glass mixing bowl and microwave until the coconut oil is almost completely melted. (approx 30 to 40 sec.on high)
In a mini prep food processer grind strawberries and erythritol into a powder.
Add the melted coconut oil, sweetzfree, flavor oil to the powder and process until very smooth.
Pour into an 8 x 8 foil lined pan and put in freezer to set.

I thought I read somewhere that coconut oil shouldn't be used with people who have high triglycerides. I cant find where I read it at, now, though. Anyone know if this is true?

the strawberry oil. ours has a nasty taste to it. does yours and if so does having it in the chocolate improve the taste.

This is the 1st time I used it so I have no idea how it tastes with chocolate but I see nothing nasty about the taste of this mixture. Perhaps you used too much by accident. I have noticed with other flavors that I have used that the flavor is distorted when too much is used.
