Storing cooked bacon
 
Hey everyone! I just got a good deal on bacon and wanted to cook some up ahead of time to use on salads. What is the best way to store it so it stays good and also doesn't get soggy-ish to where you cant crumble it up good? Do I have to keep it in the fridge or is it safe to keep at room temperature?

I will cook a pound and just put it in a baggy in the fridge and it never gets soggy or limp. I usually zap it in the microwave for a few seconds to reheat. I have also cooked and frozen it and it comes out just fine. I would not leave it out. That doesn't seem safe to me.

I put it in a baggie in the deli drawer of the fridge. Then I can take a few pieces out and tear them into the salad. It's mostly crispy.
Refrigerate after cooking-unless you want food poisoning!

I catered for 5 years, and used to make VERY LARGE portions of bacon in the oven. Cooks up beautifully. I use this method at home too. If it's just a couple pieces I use the toaster oven.

I'm not a big fan of microwaves, but I imagine you could zap refridgerated bacon for 30 seconds and it would crisp right up!

That is interesting! Do you have to turn it halfway through? In fact could you give us explicit instructions for the oven method? Sounds handy!

I would cook it in the oven, then layer it in a casserole between sheets of parchment.

Unless you have one of those food saver dealies, then you could shrink wrap it.

No turning necessary. I just line the cookie sheet with foil, throw on the bacon, and set at 375. I would guess I check back in 10-15 minutes. Depends on how thick your bacon is. I buy ULTRA thick yummy bacon from Whole Foods. Fries up beautifully, with no smear of bacon grease all over my cooktop! Leave the fat in the oven, come back later when it's solidified, and toss the foil. Now that's easy bacon clean-up!

I always cook my bacon in the oven. It cooks up nice and flat...no curling like on the stove top.

Plus you don't have to screw with flipping it. I'd just about rather have my teeth drilled as cook bacon in a skillet.

Wow ... never thought of bacon in the oven. I hate the mess it makes on my stovetop, no matter how careful I am, I still get splatters. Going to make some oven bacon right now!!

I always cook my bacon in the oven too! It's the absolute best: no burns, crispy and flat, and the rendered fat is perfect to cook with later. YUMMY!

I cook mine at 350*, because I like it slightly less crisp, and that temp cooks the fatty parts so that it melts in your mouth. I also use thicker cut bacon, from the grocery store butcher.

As for storage, I wrap them in a paper towel and put it into a ziplock bag. It stays good for as long as I need, and just a few seconds per slice in the microwave warms it up without cooking it further.

I use my griddle to cook bacon, drain it and store it in the fridge in a ziplock bag then reheat in my toaster oven (or microwave but I prefer the extra crispness I get from the oven). I've also frozen cooked bacon too and that does very well--the pieces don't stick together so I just take out what I want. For salads, I go ahead and crumble it up then just store in a baggy or reuse the jars that commercial bacon bits come in (clean jars of course).

Hell yea .. outta sight, outta mind. Besides, I have a self-cleaning oven, not a self-cleaning stovetop .. :hyst:

I did make some last night in the oven, it really did come out great, although it still splatters, just inside the oven. I think next time I'm going to cover the pan with foil on top and see if I still get good results without the splatter inside my oven.

I just no matter how you cook bacon .. its still gonna get messy.

how long will it last in the fridge after you cook it?

A long time. I buy ends and pieces in 3 to 5 lb. packages , then cook in oven. When cool I spin in my vita mix and I have bacon bits . I freeze half .

Bacon stays a long time in the fridge. A couple of weeks at least.
