Fried zucchini

Anyone tried deep frying zucchini by dipping in egg and coating with parmesan cheese. Will the cheese just burn off?

I've done it with eggwhite only (stickier to me, and not so "souffle-y" if that's a word!) and half Parm/half Carbquik which worked great. It WILL brown faster than regular breading though so be prepared to keep an eye on it!

I'm doing fried zuccini and hot wings tonight. Parmesan should do fine--alot of people use it for frying. I prefer to mix it with pork rinds or Carbalose myself.

I made some and I used 1 whole egg and two egg yolks. Dipped quarters of zuke in egg, then rolled in parmesan. Turned out soooo good! A little crunch on the outside and the zuke was all warm and mushy inside. I used fresh parm. and a lot of it fell off. Canned parm. works much better, the powdered kind sticks better.

Ok - I used the whole egg wash and coated with parm cheese and deep fried. Turned out very good, but a little "eggy". Next time I'll try using just the egg whites.
