I will try this next time I get a chocolate craving, generally during TOM. IIRC, didn't Atkins original book have a flourless chocolate cake? I'll have to research.

Carolyn, I don't post much, but thank you so much for your wonderful, simple recipes. I'm not the type of person who will go get poly-d, guar gum (or whatever it is ), etc. I like my recipes simple and made with basically whole ingredients.....whatever I can get from a regular supermarket. (with the exception of my sweetzfree, of course )

Hi everyone.

Thanks, Bridget..I love simple recipes, too.

Fats you can use: Coconut oil, sour cream (non-fat, too), mayo, butter..OR skip the fat and use cream or CC milk..

This is a very flexible recipe..

Ok Carolyn and gang... I made the cake, I ate the cake. Anyone else have a stall from eating this? It makes no sense. I ate my regular like ususual. I added into the days menu, 1/2 c canned spinach with my lunch. Then I had a cup of coffee with tsp of heavy cream, 3/4 oz of sharp cheese, and the cake. I am up two pounds this morn. UGH UGH UGH UGH UGH. BUT the cake was soooooooooo very good!!

I made this with sour cream the other night and put a little cool whip on top and it was wonderful!! I am finding that all of Carolyn's recipes are like heaven and have kept me on plan!!! Thank you Carolyn for all your recipes!

Carolyn's little cake worked GREAT for individual trifles.
Can you imagine all the variations we can do on this one? Lovin' it!!
Mine has layers of:
SF Choc sauce
Squares of the magical cake
SF vanilla pudding made w/cream & cc milk
more sauce
toasted pecans

mmmmm!! to die for........

OMG...........that trifle looks divine!!

LC ice cream on the bottom with the cake and sf caramel sauce with pecans!

Who says low carb eating is boring?????????????

Going to have that this weekend for the birthday celebration for my grand-daughter. I can have something too.

I doubled this recipe for dessert tonight. My son is home from college, so we all had a piece of cake and a bit of SF vanilla ice cream.

I put this in a 6 inch pyrex dish (greased) and zapped it for 1 minutes 20 seconds until middle is done. Talk about quick.

Oh..there are lots of frostings that are good, SDs..Let me find one for ya.


Here's Bobo's from his Mint Chocolate Cake:

Chocolate Topping
2 Square Lindt 85% Chocolate Bar
1/2 Tablespoon Butter
1 1/2 teaspoons Heavy Cream
14 drops Liquid Splenda

Melt all ingredients in skillet or microwave. Spread on top of mint layer and sides.

This is very tasty, similar to chocolate frosting!

Shirl: Do you mix it all up really well? LOLO..I used a whisk for my eggs and then get everything smooth. I sometimes will turn it out into another dish to microwave it..It looks better that way.

Carolyn, I do mix it well and bake it, too, in a 16-oz. measuring cup. Then I plop it out into a bowl and put whipped cream on it. I'm sure that's why it doesn't look that good...because I don't put it in another dish to bake. Like I said, it sure tastes wonderful, though. Thanks for the recipe!
