Made Spinach Artichoke Casserole!! YUMMY!

DH and I were craving Spinach Artichoke dip, but I knew if I made it as an appetizer, we would totally go overboard with it. Decided to make it into a side dish. Looked for recipes for it, but I didn't really find one I like, so I came up with my own. It was so ridiculously good!! MMMMM

Here it is, sorry about some of the measurements...lol

1 pkg of thawed spinach (canned I'm sure would be okay)
1 can of Artichokes, cut up
1/3 block of cream cheese
2 heaping tablespoons of sour cream
2 heaping tablespoons of mayo
1/3 cup of half and half (could use heavy cream too)
Minced onion for taste and texture
4 whole mushrooms cut up
Dash of cayenne pepper (optional)
1 teaspoon of galic salt or powder (to taste)
Pepper
1/2 cup parmesan cheese

I combined the cream cheese, sour cream, mayo, cream, spices, and 1/4 c of parmesan cheese into a bowl and stirred until throughly mixed. Then I threw the spinach, artichokes, mushrooms, and onions into a casserole dish. I then poured the sauce over the veggies and mixed it all together. Then I sprinkled the remaining parmesan cheese over top. Baked at 400 for 20 minutes.

It was amazing!! Tasted like the dip, but had a little extra to it so it could stand by itself as a side dish.

Thanks. Calories, fat and protein would be great too. I keep track of all of them.

You didn't say how much minced onion. I put in 1 tsp and the sour cream/mayo are not "heaping".

I don't like mushrooms, so how much would that reduce the calorie and carb count to leave them out?

Karen,
The mushrooms don't make much difference - A mushroom is about 4 calories and 1/2 carb so 2 carbs off the entire recipe and 16 calories.

What size package of spinach???? It comes in 10, 16, and 32 ounce.
This sounds great and I would like it with chicken or possibly ham!

I made this and thought it was very good. I used the 10 oz package of spinach, and all I could find was a jar of artichokes. Didn't check the size of the jar. I cooked this in a 9x9 dish and got 6 servings. I think next time I'll double the recipe.
