Almond Breeze

I feel pretty dumb asking this question, but awhile back, I ordered from Netrition a container of unsweetened Almond Breeze. It has a date of July 3 on it, and I haven't opened it yet. I'm wondering what to do with it. When I searched the recipe rooms, nothing came up. When I search Lowcarb Recipe Help and Suggestions, not much came up. I'm assuming that when I open it, I will have to use it within a few days. Can I use it in place of milk or cream, or does it have a real different taste?

One of my LCF's uses hers in her coffee but she is the only one I know who has ever had that I know. I almost bought one with my last Netrtion order but thought I'd be stumped like you are

Shirl: Just open 'er up and taste it. I think it does have slightly almond taste..but you could use it up quickly in shakes, puddings, etc...

Almond Breeze will sub for milk in just about any baking situation. it is very LC also.

My DW is lactose intolerant and when making cookies for her that require dairy I will use almond breeze instead.

I like it in my cereal....ok, not really cereal, I use either 1/2 c barley or wild rice (cooked), 1 scoop protein powder and almond breeze, and since I am moderate carb, a half banana. Oh and a tsp of Coconut Cream Concentrate.
I have used in place of milk in recipes as well.

how exactly do you make this cereal? do you use either or on the rice and barley or both?

I like to use AB on cold cereal Special K plus protein.

Tater Head, easy, peasy. I just cook up 1 cup of either barley or Wild Rice with however much water the packages says (for barley, I think it is 2 1/4 c, and I think it was 4 c for the wild rice), drain if necessary and put in covered container in the fridge. This makes a lot of mornings breakfasts. I eat till gone then cook the other, for the sake of variety.
In the morning, I take out a 1/2 cup, add my tsp of coconut cream concentrate and water or almond breeze (just a little) and put in the microwave till nice and hot. While this is heating, I measure my orange flavored whey protein into my bowl (could be any flavor, I have used the plain Splenda sweetened as well) and the Almond Breeze and mix till all is wet. Then I cut up my half banana, the riper the better I am finding, so no more wasted bananas, and then put the barley or rice in and mix up and eat.
I have also fixed it with a half cup of fresh pineapple, delic!!!
But, remember, I eat a more moderate carb, as I am exercising hard everyday now, and I eat my higher carb things around my workouts to fuel them.

Thanks Bette,

I eat higher carbs too because I do protein power, it's not that much higher, 10 net per meal. I try and eat no more then 30-40 net a day. This looks like and interesting change for breakfast. I won't add the fruit in just yet, maybe later.

Personally, I found that to be so bland I ended up throwing out 2 boxes, vanilla and chocolate. Just coudn't get into the taste. ymmv though.

Did you shake the box? all the good stuff is on the bottom. I like the plain best for cold cereal. I just can't see putting vanilla flavored milk on my cereal .

The chocolate makes excellent hot chocolate. Just warm it up in the microwave and add in a little SF White chocolate sryup...its great. Especially with the cold weather we've been having.

yah that was it then, it's pretty boring blah without a good shake because the stuff settles on the bottom. I shake the carton everytime I use it for these reason.

I opened the carton tonight and drank a glass of it (unsweetened Almond Breeze). It didn't taste bad at all. I can see where it would be a good substitute for any recipe calling for milk.

The chocolate version warmed in the microwave is like the best low carb hot cocoa I've ever had. It's lower in calories _and_ carbs than Hood Carb Countdown, and it may even taste better.

Kevin posted a recipe for an Impossible Coconut Pie that uses 2 cups of Vanilla Almond Breeze. I haven't made it yet, but that's what I bought some for. Since seeing this post, and wondering for awhile ( ) what the heck I bought if for, it's going on my baking list for next week!
