Dana's Carpenter's all meat chili is great! Really hit the spot on this cold day. Anyone else love her recipes?

I have two of her cookbooks and rarely think to check them out. I find so many good recipes on this board. I do need to look through it though.

I do have all of Dana's cookbooks, as I have many lc cookbooks.

However, I rely much more on this website and LindaSue's for my inspiration, these days. So thanks to all y'all for the help!

All-Meat Chili



Recipe By : Dana Carpenter 500 low Carb recipes

Serving Size: 6

Categories : Soup



Amount Measure Ingredient -- Preparation Method

-------- ------------ --------------------------------

2 pounds ground chuck

1 cup chopped onion

1 teaspoon garlic powder

1 Large can tomatoes with green chilies -- 14 1/2 oz can

1 Large can tomato sauce -- 8 oz

4 teaspoons ground cumin

2 teaspoons dried oregano

2 teaspoons cocoa powder (sounds weird but its good)

1 teaspoon paprika



Brown and crumble the beef in heavy skillet over medium-high heat. Pour off the grease, and add the onion, garlic, tomato's and chili's, tomato sauce, cumin, oregano, cocoa and paprika. Stir to combine



Turn the burner to low, cover and simmer for 30 minutes. Uncover and simmer for another 15 to 20 minutes, or until chili thickens a bit. Serve with grated cheese and sour cream, chopped raw onion



Description:

This is very yummy.

Edited to add: I didn't have the 14 1/2 oz can but had 2 of the 10 oz. can's of tomato's with green chilies. My tomato sauce was 2 of the 4 oz can's.

I revisited my Dana Carpender's Crock Pot or Slow Cooker cookbook and came up with a load of ideas I want to try. (after reading another thread about easy dinners requiring few ingredients)

I made her glazed chicken wings from the slow cooker cookbook on Super Bowl Sunday. Yummy! At the very end of the cooking time I stuck them under the broiler for a few minutes and made them just a little crispy and so good!
