Expired CarbSense Baking mix.

[COLOR="DarkOrchid"]OK, I need opinions on this.

I have FOUR boxes of CarbSense Baking mix that expired in Aug. 2005. They have never been opened and have been kept in a cool dry place the entire time. Wal Mart had them marked down to around 50 cents at that time( they hadn't expired yet) so I grabbed somethinking I would use them. HA HA HA! I also have a box of their choc. cake mix, a box of pizza dough mix and a box or 2 of biscut mix. For the baking mix it has 2 carbs w/ 2 grams fiber. I personally am one that subtracts the fiber.

I see some things in here I could use it for but I obviously dont want to use it if it's going to make me sick.

The ingredients in the baking mix are:
Soy protein isolate, oat bran, vital wheat gluten,baking soda and soy lecithin.

Personally I would toss it. 17 months past expiration and oat bran has a tendency to go rancid fast. I would not chance it.

I agree, toss it. I remember hearing (an e-mail, maybe) of deaths due to Bisquick or pancake mix past expiration--I think it grows some kind of toxic mold or something. I was visiting my mom over the holidays and tossed a lot of boxes of that stuff that had expired. Told her it wasn't worth taking the chance.

For what it's worth ... I have serveral boxes of Carbsense Snickerdodle cookie mix, similar expiration date, similar situation. I used one last week, and it tasted fine - didn't make me sick. Doesn't mean that yours will be fine, just my experience ....

I still have long expired Atkins muffin mixes.
They taste fine and we didn't get sick.

The expired Bisquik and pancake mixes had been sitting around for a long, long time after having been opened, which allowed the mold to grow. If the package is still sealed, it would probably be fine, although perhaps the taste might not be as good as it might have been.
