I love Shiritaki Noodles.

I love these..I made the fettuccini on last night. I rinsed thoroughly and thin dried them in a frying pan.

I got a carton of organic chicken broth boiled it and then dropped 3 scrambled organic eggs and then 2 scallions sliced put the fettucini/shiritaki and then sprinkled with locatelli cheese..It was awesome…and I bet it was like 200 cal a huge bowl…my DH ate the other half and loved it also...the texture reminds me of calamari which I love. I cannot wait to try other recipes.

I just discoved these noodles also. I used them in chicken soup, very good!! I still have to work on how to cook them, they were a little tough.

The secret is "NOT" to par boil first, even though the package says to. just add them in whatever dish your making last minute. Too much cooking makes them more chewy IMO, 1-2 minutes is all you need.

I just rinse them with very HOT water, thoroughly -- maybe 30 secs to a minute, then let drain and add at the last minute.

Works like a hot dam.

So, do you use the Tofu Shirataki or those made just with yam flour? I found the tofu at one time but can't remember where. I just bought the plain ones the other day.

I use both, the straight "yam" flour all fiber and the modified "yam" flour plus tofu, all fiber and protein.

" Tater's stir-fry"

6 cooked chicken tenders (cubed bite size)
3 Tbsp toasted sesame seed oil
2 tbsp soy sauce
1 Tbsp chopped garlic (jar)
1/2 cup frozen mixed bell peppers
3 cups thinly chopped cabbage, about 1/2 head
hand full of fresh bean sprouts
1 packet chicken flavor top ramen seasoning or granular chicken broth
1 bag of Tofu/shirataki noodles-cut up a little using a pair of scissors. Drain and rinse very well first, NO PAR BOIL!!.

Toss everything in frying pan for about 5 minutes or until cabbage is wilted . Add some chopped green onions on top right before your serve it, yummo.


Salad to go with stir-fry.....

Ingredients:

1 tablespoon vegetable oil
1 teaspoon toasted sesame oil
3 tablespoons rice vinegar
1 pk sweet & low (better then splenda)
2 teaspoon soy sauce
1 pinch cayenne pepper
salt/pepper to taste

3 cups shredded cabbage
1 cup shredded bok choy
1 cup snow peas
1/4 cup sliced green onion
1/2 cup shredded carrot

Directions:

Combine first 6 ingredients in medium sized mixing bowl and mix well to make dressing. Pour over the salad mix and toss.
