Taco Soup recipe?? anyone??

Hey everyone...

My DH whom is NOT doing anything LC has been begging me to make Taco Soup for him. Mostly all I can find are non-LC recipes, which call for beans (will have them on the side for DH). Anyone have a recipe for me??

Oh, per request of DH, must include the use of "Velveeta"....LOL

From Linda Sue's web page,itis very good!

CHERI'S CREAMY SOUTHWESTERN TACO SOUP
1 pound ground beef
2 3/4 ounces onion, chopped, 1/2 cup
2 cloves garlic, minced
1 tablespoon cumin
1 teaspoon chili powder
8 ounces cream cheese, softened
2 10-ounce cans Ro-tel tomatoes, undrained (tomatoes with green chilies)
2 cans beef broth
1/2 cup heavy cream
2 teaspoons salt, or to taste

In a large soup pot, brown the ground beef with the onion and garlic; drain. Add the spices and cook a couple minutes. Drop the cream cheese in bits into the meat. With the back of a big spoon, smash it into the meat until no bits of white remain. Stir in remaining ingredients and heat through.

Makes 8 cups or 6-8 servings

Per 1/6 Recipe: 361 Calories; 29g Fat; 18g Protein; 7g Carbohydrate; 1g Dietary Fiber; 6g Net Carbs
Per 1/8 Recipe: 271 Calories; 22g Fat; 13g Protein; 5g Carbohydrate; 1g Dietary Fiber; 4g Net Carbs

I checked that out! Might have to add a lil' Velveeta in there just to satisfy DH that I used some.

CHERI's CREAM SOUTHWESTERN TACO SOUP from Linda Sue's website comes out tasting like it has velveeta in it, it's sort of orange colored due to the Rotel and cream cheese combo. I've made it with either shredded chicken or shredded beef; and I've also tweaked it a bit by using fat free cream cheese and fat free half-and-half, and I like it spicy!

Good luck with these recipes!

Linda Sue's Creamy Southwest Taco soup is AWESOME! I too have made it with chicken, and also added beans to half the pot for my family. No velveeta needed!

Never tried it (although I will now that I've seen it), but everything I've ever tried of Linda's has been amazing...

Will definately make it for dinner tonight. When hubby called a bit ago asking what was for dinner, I told him I had found a recipe. The first question, "does it have velveeta in it??". You'd think the poor guy was going to starve or die without his velveeta!!

So, I'll use some, but not much because I know the carbs in that can add up quick. Thanks for the Linda Sue recipe recommendation!!!

I made this same one and it turned out great.

I think I subbed regular cheese for the velveeta though :blush:

Here's my taco soup recipe. It's the best soup I've ever had. I serve it with Fritos and you can also put shredded cheese on top. I normally double the recipe so that I can freeze leftovers in small batches...it reheats well.

1 lb. of lean ground beef

1 can of Pinto Beans

1 can of Kidney Beans

1 can of Black Beans

1 can of Great Northern Beans

1 can of Fancy Diced Tomatoes

1 can of Whole Kernel Corn

1 can of Beef Broth

1 pkg. of dry Ranch Dressing (fat free)

1 pkg. dry Mild Taco Seasoning

Cook meat and drain, wash juice off of the Black Beans

Combine all of the ingredients in large soup pot and heat thoroughly

Charski, Just looked at your stats. We are very similar! Except I am 60 years young. I started Atkins on 1 April 2003 and have been in maintenance since 4 May 2004 when I reached goal. Isn't it great that you can lose and keep it off as longs as you stick to your way of eating.

You can always substitue black soy beans for any beans in a recipe you find.

Made Linda Sue's recipe last night and it was awesome!! DH (non LC-er) loved it!! I cut up a tortilla (5 carbs), and broiled it in the oven till it was crispy like chips. DH had his carby tortilla chips, and I had my nice LC chips. Used 1/2 block Velveeta, 1/2 of the cream cheese, and added a can of Ro-Tel.

Definately making this again. Probably next week!

Okay, you guys have me wanting this, so I took out the ground beef this morning and had my husband buy velvetta last night. (I had all of the other ingredients at home.) I'm doing a combination of Linda Sue & Cheri's recipes. I want beef (Cheri), not chicken, but I also like the sound of the cream cheese/velveeta blend (Linda sue).

I can't wait!!

I made this Wednesday night. I used Cheri's recipe as a base (thanks so much! ). I doubled the recipe, then added extra ground beef, green chilies, cumin & chili powder. Then I added 4 oz of velveeta, cilantro, hot sauce& ground bay leaves. (I like things spicy! )

WOW! It was so yummy! I'm actually having a bowl tonight for dinner, along with a salad. I had a TON to put in the freezer for quick meals later.

What I like about Cheri's Creamy Southwestern Taco Soup recipe is that it is so fast to whip up. It's one of those satisfying meals that can be made when you are hungry at the end of a work day.
