My daughter had this for breakfast this morning! She loves it with the sausage instead of bacon.

It is SO delicious. I have tweaked this recipe just a bit- I add a splash of Egg Beaters, about 2 TB of cream cheese, a bit less sour cream, and chia seeds. It is not watery and sets up so well! Yum!

I received a huge (4.5 lb.) cabbage from my SIL last week. I used half of it for this dish. This dish is very tasty - it kind of tastes like a low-carb chicken tetrazzini. I used Costco rotisserie chicken, added an 8 oz. pkg of white mushrooms (sauteed in the bacon fat) and subbed out the red bell pepper with some canned pimento peppers because I needed to use them up.

This received a thumbs up from all family members - that doesn't happen very often!

I know, KC. Very few low carb dishes gets a thumbs up from my family too LOL. But this one everyone loves!!!! I use the sausage in place of the bacon for more flavor, but other than that....we love it!!
