I am planning on making this today. It is pretty chilly here and we are expecting snow tomorrow! Is it REALLY the end of April??

I make a version of this but use 1 can of chicken broth, not as much butter, and not as much HWC. Still makes a very rich and filling soup.

I made this last night and used 1 cup of chicken broth in place of cream. It was delicious!!

Here's what I used (didn't measure anything sorry!!)
frozen broccoli(thawed and cut smaller)
frozen cauliflower (thawed and pureed in food processor with chicken broth)
chicken broth
heavy cream
sour cream
cream cheese
garlic salt
onion flakes
I DID use some corn starch but for the small amount I used and the amount of servings I will get out of the pot it is harmless

This is so freaking good!! I had it last night for dinner, took some to work for lunch and am now having more for dinner!! I may start to look like a piece of broccoli!!

Boy, I have to make this again real soon. Very cold here this week--in the teens. Sounds like soup weather to me!!!

Saw this recipe in a magazine in the doctor's office and thought of this post. I took a picture of the recipe with my phone, bought the ingredients on the way home, and I'm going to make it this weekend. I'll let you know.

Broccoli-Cheese Soup

3 cups chicken stock
1 ¾ cups broccoli florets, coarsely chopped (about 8 oz.)
1 cup diced onion
½ cup chopped carrot
½ teaspoon salt
¼ teaspoon black pepper
2 garlic cloves, minced
¾ cup half-and-half
4 ounces shredded extra sharp cheddar cheese, divided
¼ cup flat-leaf parsley leaves

Combine first 7 ingredients in a large saucepan, bring to a boil. Reduce heat and simmer 10 minutes or until broccoli is tender. Pour soup in a blender. Blend until smooth.

Return soup to pan. Stir in half-and-half and half of the cheese. Top evenly with remaining cheese and parsley.

Serves 4

Calories 160, carbs 10.7, Fiber 2.1,

Made this for dinner tonight. Smells deelish and it is my DDs favorite. Probably won't have any leftovers
