Minestrone Soup..

I made this tonight..It was great.

In a 2 quart saucepan:

One Tbs. of olive oil
1 carrot, sliced
1/4 of a medium onion, chopped
1 tsp. garlic

Saute this for about 5-6 minutes until onions are soft.

Add:

One 14 ounce can of Italian stewed tomatoes, whirled in the blender
One 14 ounce can of chicken broth
1 tsp. Italian seasoning
salt and pepper to taste

And cook this for about 20 minutes, then add:

one small zucchini, chopped
a couple of handfuls of spinach or part of a package of frozen spinach, thawed

Cook for about 10 minutes until zukes are soft..It can simmer for a while, too.

Options: You can add some dreamfields noodles or elbows after you get the chicken broth/tomatoes boiling. You could also add cooked chicken or cooked ground beef or leftover roast..OR even turkey..

Serve in bowls with parmesan cheese.. Serves 2-3

This looks like a Recipe to comfort a LC heart and soul. The Dreamfield's pasta will be perfect for the authentic look ...and great timing for posting it, with leftover T-day turkey on the near horizon...

Immediately thought how good this would be paired with the Artisan Bread; hope you don't mind my adding it:
